What to do if parents say just offer prayers and keep fast and that's enough for you. Even they do objections upon reading islamic books. Along this attitude they want to be respected by me in a manner according to Islam.
Do what Allah want you to do, if they are stopping you from it or making you do what Allah don't you to do then don't obey them.

Any starting books 📖 suggestion?
I would recommend starting from the Axial age say from 500 BC to 250 BC.
After that the German Philosophers like Nietzsche, Kant, Hegel etc.
Then Iqbal's philosophy.

جی اصولاً تو ایسا ہی ہے۔ مگر اب یہ اُس عمل پر منحصر ہے کہ ایسی کیا حق تلفی تھی اور واقعتاً انصاف ایسے ہی بدلے کا تقاضہ کرے گا کہ نہیں۔
