Hey Mike, I really like how this came together. In my marinade (overnight always lol) I use lime juice and white pepper... you won't taste the lime, but it helps tenderize without the baking powder. Also, never thought about the slurry at the end, but will definitely try it, that really worked well. Never lose the burn lol.
Good to see you venturing into Chinese cuisine and hope to see more recipes like this. I usually add a table spoon or so of oyster sauce either to the marinade or the sauce. Over jasmine rice and stir fried vegetable on the side.
Buffets have completely ruined the Chinese food experience. I miss the days of ordering from a restaurant and actually getting something spicy! I'm definitely giving this one a try.
