Great minds! This is what I have been doing for 20 years. Very laborious, but it works for wheat, oats, rye, and barley. My set up is slightly different. I made two boxes about 2'x2' and about 6 inches high. The bottom one has a solid bottom and the top one has 1/4 inch hardware cloth as the bottom. I rub the grain heads through the mesh and it falls into the bottom box. The result needs to be winnowed. I process between 25 and 50 pounds of grains a year this way.
Hard to say, depends on a lot. I would guess on the first year go for at least 200 square feet per person to try it out and get used to using it. If you plan to uae a lot right off the bat maybe plant double that or whatever space in your yard allows

That’s a great idea 👍🏻
Love it
Thanks James! Quick and easy
Thank you! How much do you plant per person?
