Nonna's Cheesy Zucchini Frittata (Spread) e104

- Buon Giorno A Tutti! In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), shares with us her Mom's zucchini frittata - 'so easy, so cheesy' and delicious on Calabrese bread. Zucchinis are aplenty right now in the garden, so here is another wonderful recipe to make good use of your harvest.
Nonna starts with 3 pounds of zucchini. She washes, cuts into smaller pieces, removes the seeds, and grates the zucchini. She adds some EVOO to the pan and proceeds to fry the zucchini until all the moisture is removed, then simply adds 1/2 cup of grated parmesan and a cup of grated mozzarella. She stirs it in, flattens it down, and rests it briefly on the heat. Enjoy this preferably hot with your favourite bread.

I can't wait to try this recipe. My grandparents came to the US from Calabria many years ago. My grandmother used to make a zucchini salad with charred, crushed mint and red wine vinegar dressing. Do you know about how to make that? I've been trying to find a recipe and never have yet. My attempts have not been as successful as I'd hoped.

Yes, you are right. This is my classic frittata: ua-cam.com/video/oJ-T08JOvBo/v-deo.html. I'm not sure why we always called this zucchini frittata but that is why I put spread in brackets ....
