Use the Trucker's Hitch to gain mechanical advantage. Use the Alpine Butterfly instead of an overhand loop if you want to use the rope again when you're done.

The butterfly knot is even easier to untie than the slip knot after you put a lot of pressure on it pulling it so tight

I believe you're wrong. It's 2:1- friction.

Anchor hitch really only needs one half-hitch since the first time you put it through makes one half-hitch, so you add one more (not two more). I prefer Truckie's hitch based on half-sheepshank (can easily be made collapse-proof btw).
At least a butterfly loop is better than a slipped overhand or slipped fig. 8 knot for untying. And contrary to what others have said in the comments,, those don't always pull out easily! Depends on diameter and type of rope. Can even damage the line/rope if they're really tight.

A simple slip knot works perfectly, but only if you wrap the bight around the standing side of the knot. If done incorrectly by wrapping the bight around the running side it will slip and close and jam.
Every experienced trucker will have a laugh with this method.

I'm so glad you actually know the calculated mechanical advantage is 2 to 1, there are a huge number of people that incorrectly believe it is 3 to 1. Then with friction figured in it would be a bit under 2 to 1 just like you said.
actually the way vectors (sorry about the technical term) work you can get MORE than 2x mechanical advantage, basically the more you pull to the side of the direction youre working the more force you git. it involves some really cool and simple physics, but only works for short distances. Absolutely wrong.
Max 2x per pulley, not taking into account frictional losses. Probably more like 1.3 - 1.5x when not using an actual pulley as the pulley.

Your anchor knot looks like a ' round turn and two half hitches' with an extra half hitch to start. The truckers' hitch is also known as a dolly in the UK. You can wrap the rope around a bight twice and pull the end of the rope through the bight. I've used it thousands of times and can tie it with my eyes closed.

try Farmer loop or better Span Loop , but tie it with sea way as bowline.
I know the butterfly loop, but I'd be more inclined to use a slipknot instead as it's even easier to untie by simply pulling on both ends. Is there any advantage of the butterfly over the slipknot in this particular case?
was gunna say the same thing. sliding overhand works the same way, easier to tie and pops right out

A slip knot will still jam under tension, especially with a wet rope.

Waaay too complicated - and then you need to literally untie it afterwards. Amateur!
The simplest way to tie this knot is to form the loop the way you showed as incorrect EXCEPT instead of tying an overhand knot with the bight, tie the same overhand knot ONLY take the bight and wrap it around the SINGLE standing part. NOT around the doubled bight itself. When done correctly the loop will not close. When tied incorrectly, that is when you wrap the bight around the single running side of the knot the loop will close and slip. Never fails, 10x quicker to tie than an 'Alpine butterfly knot and comes out INSTANTLY by simply pulling the running end. I've tied it 10,000 + times and taught 100 people (at least) and it ALWAYS works. To simplify: line doubled in one hand, single in the other, tie an overhand knot. Period.
This knot is great buts this a very complicated way of teaching it

BINGO! And when done correctly is 100% reliable. Problem is some people tie the slip knot wrongly by wrapping the bight around the running side of the line as opposed to around the standing side.
