- PRESSURE COOKER SUMAN SA LIHIYA and LATIK
Prep time: 45 minutes
Cooking time: 20 minutes
Yields: 16 halves of suman
4 cups glutinous rice soaked in cold water for 1 hour.
1 tbsp lye water - NOTE: in my video i have said 2 tbsp. please change it to 1 tbsp.
Banana leaves for wrapping
Kitchen twine
For LATIK
1 can coconut milk
1 cup brown sugar
a pinch of salt
Strain rice and add lye water. Combine well.
Clean banana leaves with clean cloth or paper towel to remove the white stuff.
Place leaves over fire or in a microwave (1 minute on high) to make it soft and pliable.
Wrap about ¼ cup of rice into 2 layers of banana leaves ( please see my cooking video)
Stack well in a pressure cooker. Fill pressure cooker with enough water.
Put the lid according to pressure cooker instructions.
Cook on high heat.
Once you hear the whistle, time it for another 15 to 20 minutes.
Cool down the pressure cooker and run cold water on top before removing the lid.
Strain.
Unwrap and serve with coconut caramel or latik.
LATIK
Combine coconut milk, salt and brown sugar in a small pot.
Use medium heat as you stir occasionally.
Cook for 18 minutes until thick.
Cool down slightly and serve with the suman.

I have a few takeaways from your video from the way I have known how to make it - using round banana leaves, microwaving the leaves to make it plyable, using a pressure cooker to cook the suman . . Very nice . . thanks for sharing

I have not tried steaming suman. I always boil it.
How to make a lye water po?
Fave ko yan chef kaso di ako marunong magbalot para di siya matubigan.
Now ko lang nalaman pwede pla sa pressure cooker ang suman sa lihia.hindi nko gagamit ng de kahoy na kalan matagal e.
Question:Does the lye water make the human green?
Lye water gives the suman a flavor and aroma and it's natural like just water,maybe the dahon itself give the color to the suman..
And it's only my own opinion and experience using lye water cuz I do used it with kutsinta..

I just followed your recipe. Bakit mapait ang iniluto kong suman? My mom said because of lye water. your recipe 2 tbsp. dalawang tablespoon naman ang nilagay ko. is it safe to eat kahit mapait? I guess 2 tbsp of lye water ay too much?
Thats what im thinking also konti lang po dapat and sa video ni chef o think bka nagkamali lang sya it should be 2 tsp.lang kc ung ibang recipe nito usually 1 tsp lang

rodel enar ok lang and valid ang question mo. This is my answer.. Hindi kase lahat ng lye water pareho. Maybe I was using a very light lye water or maybe Medyo old na ang lye water ko.... at any rate- please use your own judgement. If you think 1 tbsp is good enough sa suman mo.. please go ahead and use it. Valid ang question mo.. it’s all good! Happy cooking! Enjoy

Use a regular pot and boil it until maluto. OK lang ang kaldero.. pero less time nga lang pag pressure cooker..
Kaldero puwede nman. Kaya lng 3 to 4 hours maluto .Depende sa dami iluto mo ako 3 kilo malagkat niluto ko sa uling 4 hours bago maluto ang sarap makunat.
