One of my favorite beer styles
I've brewed a mild a few times now, I've found the best yeast for this by far is WLP028 Edinburgh. It really balances all the elements, more so than something like WLP002, which while may finish higher, is slightly sharper. WLP028 gives a much rounder finish that is perfect for mild.

Love your videos and the homebrew challenge journey. If you are using Tilt I would definitely recommend you to hook the Tilt up with a Raspberry Pi or an iPhone you are not using. Then use Brewfather as beer software instead of Beersmith. With Brewfather you can attach the logging of temperature and fermentation from the Tilt to the batch you brew, and see a nice graph of how it is moving along.

I love a good mild. It's a swine of a beer to brew though. Low gravity, but not thin, sweet but not cloying, dark but not roast. Absolute bastard to nail.

imho the iodine test is more trustful indicator of the mashing completeness
I brewed up a batch of this yesterday with your grain bill. Roaring away with WLP002, and it is sooo toasty. Yum. Crisp MO, brown, and pale chocolate, with Briess Victory for the amber. Really looking forward to this one.

Taking a gravity measure during the mash, just tells that you have sugars in the liquid, that can be starch as well, to make sure that the conversion of starch (and the mash) is completed and you have fermentable sugars, you must make an iodine test... otherwise you just measuring your wort gravity,not fermentability... Unless you want a starchy wort, you should do an iodine test
Hey Martin! Love the channel. Keep it up! Question about fermentation chamber temps: To get your fermenter to 68 degrees during fermentation, what temperature do you set the inkbird to?
Preboil gravity is not meant to be used as real time way to stop your mashing. Calculate your target preboil gravity and check if you hit it.

@@TheHomebrewChallenge as you said, the efficiency went to the roof, since I started milling my own grains I was at 60% efficiency, I still need to fine tune the mill and get used to it, today I was looking at 1.060 point In the preboil gravity at 45 minutes into the mash so I had to add extra sparge water to avoid making an imperial mild, if that's a thing hahaha
A Mild was the first beer I brewed with my grainfather.. Which I want to say, thanks NorthernBrewer for giving me a free grainfather instead of the free carboy they were supposed to give me.... Mine turned out great and it aged really well, it had a nice little roasted back note that for me can be too over powering in stouts and porters.

For a proper session, nothing beats a well kept pint of Banks' Mild on cask!
But yours, although too strong, looks a cracking pint.
Best pint I have ever had was a Bank's mild.

Can you tell us more about your water chemistry, before and after filtering. Do you typically make chemistry additions? My tap water is very high in bicarbonate so I've had to use soft bottled water. I'm considering a move to filtering though

I personally recommend the Brew Monk All-in-one system. Cost me about 300 euros and it does exactly the same as the 1000 dollar clawhammer supply system

Currently doing my PhD in brewing chemistry, love the videos mate, we use Tilts too, hooked to a Raspberry Pi. Also use a device to measure gas production to measure ferment over time.
What a cool PhD. Keep meaning to set up my Tilt with a Pi for logging.
@@TheHomebrewChallenge It's more work than you might hope, can also leave a throw away phone on charge doing it. We use Plaato digital ferment for the real time gas production, mostly for reaction kinetics but that may be well beyond the requirments of standard home brew work. If i use any of your recipies for a paper I will be sure to credit you.
Martin, future video thought: can you do a step-by-step of how you calculate to get a brew to X IBU?
Just use Beersmith or another brewing calculator. For me I use one on беер.рф (beer.rf), but it's obviously all in russian :)

Hi Martin, I want to brew this, but actually want it to be lower alcohol, about 3.2%. If I just proportionally reduce the grain to water ratio do you think it will be a bit thin? Should I keep the hop ratio the same?

Would a Pound (500gm) of Rolled Oats help in this recipe ?
I've set a challenge for myself to brew a beer like Timothy Taylor's Dark Mild for my old Yorkshire dad. He tells me it is smooth and full bodied with a "cold hot chocolate" vibe to it. I was going in another direction for malt bill: Golden Promise plus about 4% each C120 and Chocolate malt, but after watching this I'm wondering if I'm on the wrong track.

I was warned about putting my hydrometer in liquid that was too hot because it can melt the wax that holds the little weights in place. Is this so and should people be concerned?

Hi Martin, great video. I've not yet brewed a mild but from the research I have done isn't it normal to use mild malt? Have you used mild malt before? Any ideas on why you may or may not use it for authenticity / character? As far as I know mild malt is a little darker than MO. I'd be interested to know why you chose to use what you did and your take on mild malt. It's a style I've wanted a crack at for ages but I've never bought mild malt.

Hello Martin, I made this beer on a recent trip to GB. I used Maris Otter and the colourful malts as described in the recepie. I did have to make an exception with the hops as I had no EKG so I used Fuggles. The brew took over two weeks, eventhouth we were experiencing a heat wave. I was disappointed with the colour as it was rather light and my taste is for a DARK mild. If I added Black Malt would this just change the colour or also the flavour profile? May I also ask you to give the nominative amounts and not just the relative % values as I do not have Brewsmith or something similar.
That’s odd as this came out quite dark for me. Yeah a little bit of black malt of your choice would be a good addition.

Question: if your final gravity is reached before the 'advised' 2 weeks of fermentation (ale) do you stop fermentation or do you keep the fermentation? And so for how long do you keep it going?
I tend to wait 2 weeks before taking the first FG reading and 2 after another reading and then 2 days of Cold Crashing so I'm around 3weeks of fermentation. I don't know if I should fermente longer!
When the gravity stops falling then the fermentation is done. Maybe give the beer a day or so more to settle out then cold crash.
@@TheHomebrewChallenge yes but does leaving the beer to ferment after reaching the FG change anything?
@@MrWimbli There's nothing left to ferment. Fermentation is when yeast actually eats the sugar. If FG is done, fermentation is over. However, it's recommended to not bottle right away, as yeast cleans up many fermentation biproducts that are undesirable for us - basically conditioning the beer a bit. So your two weeks is absolutely perfect.
@@Brokkolesz makes sense! Thanks. I wonder if anyone has ever tried to do the same beer but one with a longer fermentation process to see if there is a difference in the taste, color, body and so on. Or if it is useless!
Just brewed this recipe. I am getting more roasted flavors than i expected. Was this beer roasty at all??
This was quite a few beers ago now but I don’t recall pronounced roasty flavors.

Martin, how can you take your pre boil reading without sparging.? Surely you are sparging, which would affect your reading. Can you explain?
I’m not sparging. The water is constantly recirculating in this system so I mash with the full volume of water then pull out the grains.
