  • CRISPY CHICKEN WITH POTATOES
    INGREDIENTS
    1 whole chicken
    3 cloves of garlic
    1/2 bunch of thyme
    1 sprig of rosemary
    1 lemon zest and juice
    1 tablespoon of butter
    100 ml olive oil
    salt and pepper
    1 kg small potatoes
    1/3 bunch of parsley
    INSTRUCTIONS
    1. Remove the breastbone and cut only the thighs and wings.
    2. Season the chicken skin and inside with salt, pepper, thyme, and rosemary, and let it sit for an hour.
    3. Boil the potatoes.
    4. In a pan, heat olive oil over medium-high heat, place the chicken skin-side down and weight it down with something heavy for ten minutes.
    5. Transfer the chicken to the oven and continue baking at 190 degrees Celsius for 25 minutes. Remove the weight and grill the chicken to brown the top, or pan-fry until golden.
    6. Remove the chicken and in the same pan with the juices and oil, sauté the garlic for two minutes, then add parsley, lemon juice, and the sauce is ready.
    7. After boiling the potatoes, season them with salt, pepper, thyme, rosemary, olive oil, and crush them. Finally, bake them in the oven at 200 degrees Celsius until crispy.
