Im from Spain. when they dropped the video of the paella burrito i didnt know about the sorted channel but i read about the problem on the news. it was a big thing in Spain. But, the main problem is that here in Spain the paella is something that people argue about all the time because if you dont to it on a specific way everyone will yell at you and say that you did "rice with things" and not paella. So is not hate on the burrito thing or Jamie specifically, but the fact that here in Spain people is stupid with giving twists to tradional dishes (and things in general really). So if when someone from spain does it is a problem. When it is a foreigner who does, well, it is time to go to war for the paella xD

The next time you are back in Los Angeles see if you can go round with Jon Favreau & Chef Roy Choi. They know the LA food scene like the back of their hands. Narrow down their choices to cuisine and just go along for the ride. Bet they would take you to the best food trucks too. Really enjoy your adventures.

But na, always try to use your suggestions of the best local eateries when visiting new cities etc. Totally agree, most restaurants (with the few exceptions are set up to specialize in the main course. So if not too far away from your 'main', it is a good idea to go to a neighbouring restaurant for your desert (walk off the main!). Oh!... and putting paella into a burrito???... not something that the spanish want to hear about.
