that is a special bao flour thats heavily bleached, thus the silky white color. don't use bread flour, they won't be fluffy. use cake flour or anything that has low protein. the higher the protein, the denser your product and they color will also be yellowish. good luck!

我也参考了小高姐视频,一次发酵就是不行,我心想或许是面粉不同或者哪些环节是我没有注意到的,谢谢你的建议😇
我曾经看过台湾的一位老师教法,从揉面、一次性发酵、分割、包馅和蒸,尽量控制在一个小时里完成,蒸出来的包子都很成功,或许你可以试一试。纯粹分享,希望可以帮到你。
