Because I live alone I take two rolled up and wrap in foil , put in my marked freezer bag and freeze that proportion helping. I freeze the cheese and sauce in proportion containers and put these with the enchiladas. Now this is put in my small bag and froze as a kit. I do that with all the enchiladas. This is a perfect lunch or to go with my mex dinner. If a friend comes over I treat them to a heated up enchilada kit to have dinner with me. I also do this with two tamales and I have very small sealer microwaveable sealer meal bags for my red sauce . There is enough in that bag for three or four tamales but I try to just have two and use any extra sauce on the taco night. I got this idea by watching you and it works great for a single lady and “ I’m a single lady “ I love that song. But I freeze everything in single portions so I don’t have to have leftovers to deal with.
Ok Now I know how to freeze them. What’s the best temp and way to cook them after they have been frozen. ? Ok I saw you say 375 for 55 min to make up these frozen enchiladas. Good ty.
I am always confused when people say to add chili powder. There are so many different varieties. Do I add a basic chili powder with added ingredients like garlic, etc. or do I use a specific chili powder like cayenne, arbol, guajillo....?

I mix ground turkey and beef a lot, especially now. One of the meat markets we go to have a better cheaper selection of ground turkey than beef. My kids didn't even realize it till my husband said something.

So excited that I went out and bought everything today! Lol. So far I've been cooking for 1.5 hours - I did add 2 tablespoons of chicken stock (I didn't have beef) about an hour in because it wasn't generating any steam/liquid. I used BBQ sauce so didn't have the acv or Worcestershire that she had. Fingers crossed it still tastes yummy
