  • In this video I talk about fire management while smoking a brisket! There is a lot that goes into smoking a Texas style brisket, and one of the biggest factors is managing the fire. Follow along to learn more about offset smokers and what it takes to smoke a brisket! I am using an Oklahoma Joes Highland Offset Smoker.

    Looks a bit dry- try spritzing it next time around the edges about every 2hrs and put a foil boat under it after you wrap it. This will catch the drippings. Also put fat on top of brisket when you put it on BP. The bark looked great.

    Get yourself a good 6" Victorinox (Forschner) knife to trim those briskets. I use a 10" Victorinox for slicing all my briskets. Look `em up and you`ll thank me. I was a butcher for 26 years. I have a smoker about your size. I place 2 bricks in front of the point to prevent it from getting a little dark or crispy. If you have pooling on the brisket like yours did, you can put a ball of foil under the spot so it will run off or just pour it off so it doesn`t mess up your bark. Your fat rendered really good, and bark looked great. Try a little garlic and chili powder next time to. Keep your fat trimmings and render it for your next brisket. Pour the rendered fat over the brisket before slicing and the slices won`t oxidize as much. Makes for a better video presentation. Great job from a lifetime Texan.

    Got the right idea, the music 🎶 is too loud and distracting. But liked the brisket cooking information.

    You need to get better seasoned wood. You are smoking your brisket with alot of dirty smoke

    Nice man! Do yourself a favor and get you an old country brazos. Take the deflector plate out and extend the stack. You won’t regret it. You won’t have to fight to get lower temps.

      I'm in Louisville, KY. There isn't a big used smoker market here. I've seen that smoker for 1k at academy which isn't bad.@@igotJesus88

    Okay, this is too strange. I just got done with a 9 hour smoke on an upright. My first brisket ever. Thanks to UA-cam, it came out very good. I will incorporate some of your ideas on the next one. From one Grubbs to another, I wish you well.
