What if you invest the exact cost of the optimisers you speak of into more panels and another inverter won't that fit in better?

There’s no real right or wrong way. Sometimes it comes down to clients budgets for example. It’s worth remembering that optimisers don’t just optimise the generation, it also provides panel level monitoring aswell as Safe Dc where it restricts the output voltage in the event of a fault to prevent things like arching and fire etc
