I am Icelandic. And I am familiar with most of the sweets there. All but that nutty thing put on ice-cream. Not sure what that is. But everything else is pretty much staple Icelandic sweets. We put licorice in a lot of candy. Chocolate with licorice in it is a very common type of candy. And that first one is a popular such chocolate.
Surprisingly maybe, we have a LOT of ice-cream stores. It is a really popular thing to do after visiting local swimming pools, that all use natural hot spring water, to have ice-cream after. Or to go for a car ride and eat ice-cream. We have a word for that activity 'ísbíltúr'. Literally: ice-cream-driving. And yes, a lot of people put licorice in the ice-cream too.
I have to clarify though that the Arctic fox is not Iceland's national animal. The Gyrfalcon is the national animal. Sadly, the cute fox is pretty hated by a lot of people. Because it kills so many birds and attacks livestock. I don't think it would ever be chosen as a national animal.

The next time Mama wants a pure, unadulterated food and is worried about diabetics, dried licorice root sticks are pretty much as unprocessed as it gets. You chew it until it becomes fibrous, then suck the sweetness from it. It's 15% sugar, but since the sticks are very light, you can't eat them fast enough to make your blood sugar spike.
(You shouldn't have too much a day anyway, but, again, it's harder to overdose on stick-form licorice than candies.)
