I found this video in a search to make a wise choice, and on your word...I ordered some of that white sauce from Big Bob Gibson's. Understand that your Bama sauce is being taken by carrier now into the Tarheel State. It will meet a TOUGH audience. But my palate awaits!

I like their food and eat there quite often, but I am not really a fan of the white sauce or just about anything that is mayonnaise based.

i've eaten an embarrassing amount of brisket in lots of different places, and honestly this was some of the best. it might look dry, but it isn't. if i remember correctly, chef mauricio sous-vides it, which may account for the unfamiliar look. but the texture/flavor was top-notch.
