As always the trick is to trick the NPC to thinking that your vehicle is not as good as it is. in FH5 A.I. is scripted or railed. i like to call it rail-driving, it's where vehicles follow a specific path by ignoring all other game physics, sometimes you see NPC vehicles twitch around really weirdly, that's because they don't follow any physics, they drive on a rail like train and only speed up or slow down based on how player drives.
if you want to beat that scripted rail-road NPC, you have to simply trick it with specific vehicles and their setups.
