    i grew up in Samoa for 15yearss... now in aussie for over 15years... I love my island food but something about faiai pusi that i was never a big fan of... My grandparents loves it.. too many bones (ivi), which stop me from enjoying eating the thingy.. and also everytime im about to eat faiai pusi, the thingy looks like a snake.... which weirds me out..... but i guess many eldest still love it till now...

    coconut cream thinned with water, add onion, optional lemon juice, eat with umu is called 'miti'. 'pe'epe'e is not as thinned out as miti, and thats what is used for fa'alifu, "fai'ai is straight coconut cream used to make all the food where its needed to be thicker, so its more or less 3 words descibing the various thickness of coconut cream, i love fai'ai pusi but the bones are hard to handle, the skin is my favorite, better to eat with fingers so you can feel bones

    Haven’t been on the spot in awhile Joe. Drink in a mason jar...old school. It’s gonna take some getting-used-to for the fai’aipusi. Bony as heck so careful Joe. Better stay with the fai’aife’e. As for the lu’au turkey tail, that’s a trip to the cardiologist...
    Fai’ai is when meat is baked in just Pe’epe’e and seasoning, except palusami/lu’au. Keep them videos coming Joe. ✌️👍🇺🇸

    Just cracking up at the people below saying it’s yuck and disgusting ,but if they were in Samoa with the not so rich people trying to make a living they will not be complaining,never forget where you come from and the struggle and sacrifice your family had and those who still is now ✊🏾I remember back in the islands eating just taro or cassava with no meat many times cause we couldn’t afford it,now living in Europe i still appreciate the island life and the people who lives there who struggles ,having these kind of food is always the best ,,humble beginnings💯respect to you uso 🙏🏽

    USO you had me stitches with your reaction to the faiai pusi. Not my favorite either. I told my wife about you eating the faiai pusi and she said WHAT? She thought you were chowing down a cat. LOL. No worries I got her straight. There are various ways Samoans cook faiai. We can cook it in a coconut cup, in a laufai, in a can, in a pot etc..., as long as there is coconut cream mixed with the meat. The faiai itself is just a straight cooked coconut cream in a coconut cup in a umu. Faiai means brain. So think of a coconut milk gels like a brain when it’s cooked...I know not a pleasant image. Malo ma ia manuia.

    1. Formal
    2. Informal / everyday language
    Fa’aaloalo is respect which is formal
    Fai’ai Pusi is one of the best fai’ai you’ll ever have, it’s even better when it’s fresh from the umu

    Your reaction to the faiai pusi brought back memories for me ... I served my mission in the BEST mission ever - Apia Samoa 😁 ! Anyways, my 1st area & very first fafaga ( which was breakfast), we were served faiai pusi & faalifu talo! I was so appreciative for the meal, but the prostleying in the heat and walking up the hill ( we lived in Safaatoa & our fafaga was in Lefaga) was so not the business!! It is an "acquired" taste - which I have not acquired 😃, but I do love me some breadfruit !!!

    Was watching a video from Samoa and the family (actually it was mine) had built part of their house over a loved one's grave. So their house's roof went over the grave and it had become part of the patio. In the traditional Samoan culture, where you live, the people live very close to their dead, and they live very close to their animals (and plants) also that they kill for their food, so basically, death is always close to them (unlike us here in the West). The Samoan culture is a Neolithic (i.e. early agricultural) one, and like all Neolithic cultures its founding myth is of the god who sacrifices his life to a goddess whom he loves, only to be reborn again and saving her people in the process. Samoa's version of this worldwide myth (which is found amongst the peoples along the earth's equator, where the sacrificial god is usually in the form of a Snake) is the story of Sina and her lover Tuna, the Eel. You probably know this eerie pagan Samoan myth, and it probably predates the patriarchal Tagaloalagi as creator myth of Samoa, I believe. So the Eel is still a very sacred animal to the Samoans, I heard somewhere said. (Don't mind me, I'm just a Western raised Samoan Nerd thinking aloud.)

    Hi Joe, when you had put the fork up close to the camera to show the eel... I wanted to eat it. I dislike all the bones but it reminds me of NZ flounder, but a little more tender meat than the flounder. I enjoy eel.
    I cracked up when you mentioned the trembling of your voice.. 🤣 E ke fefe fua ha ha

    gagana fa'aaloalo is formal language, gagana fai so'o is everyday language, you use fa'aaloalo to show respect in village councils, to matai's, and those with high positions, one difference is the pronounciation of T, formal is "T", informal if "k"

      Very interesting explanation.I know about the two languages and I always knew that the T and K are interchangeable -but not that it's the royal reason behind it.
      I always thought (as a non samoan) that in Samaon using the K sounds "harsher".

      Luau is always magical to me. I never get tired of it. Faalifu fai is always too dry for me. I think that’s why I’ve switched over to ulu as my favorite now.
