Great job man! looks delicious. I have a Weber kettle, and smokey mountain. I also recently bought a pit boss pellet grill, I've had it about 4 months now, its Awesome! If Im being honest though, it is really hard to beat that old school, genuine smokey flavor you get from using whole chunks of wood with the webers. If your willing to babysit them a little more, they will usually produce really good flavor profiles with the right selection of wood.

Anyone who may not be too familiar with smoker cookers and is wanting to take a shot at it, I would highly recommend the Weber Smokey Mountain. You really can't go wrong with it. It's a legendary cooker that won't break the bank. Harry Soo is a world champion pit master who routinely shows up to competitions with his Weber Smokey Mounatains and beats out other pit masters that have thousands of $'s put into their custom made smokers. Great cooker to learn on.

Hey Guys - Love the smoker comparisons between pellet and briquette/woods. I thought you did a great job in preparing smoking and resting the briskets. What I’d like to see you in the future is capturing and tasting the flat with the point. I love what you did by picking up the brisket and we call that wagging their tails and those tails were wagging and touching each other without falling apart, which tells me that’s a perfectly and deeeeeelllliiccious brisket. Another great video keep up the good work can’t wait to see you hit 100,000 subscribers. I know I am sharing your videos with all the people at Nestle ‘s. Not sure what I missed but why are you only doing a video on Friday instead of Tuesdays and Fridays? Love you guys.

Salty Tales, I genuinely enjoyed this video. I have been smoking meat on charcoal for years, as a younger man I started on a basic square grill from walmart. I worked up to a barrel smoker, and now I have a pellet smoker, but haven't had the chance to smoke with it yet. I was a little skeptical, but you put me at ease, it looks like it may do a decent job after all.

In general, a pellet smoker will give inferior smoke flavor to anything using charcoal and / or wood; the "set it and forget it" aspect and the large capacity are about the only good things they have going for them.
My preference would be using a real charcoal fire in conjunction with a Fireboard 2 Drive and a blower fan like the Fireboard one or a BBQ Guru Pit Viper that will let you "set it and forget it" with the controller pretty much taking care of stoking / dampening the fire for you to maintain temps. I feel you get way better flavor this wya.

Great Video Ninja! Master Black Belt Grilling. Try adding two or three shots of XO or VSOP cognac mixed with mayo as a binder and SPG (salt pepper garlic) and it's as you say I'd I may borrow Delicious!!!

Yeah. Still feel like both weber and pellet brisket fat cap should have been trimmed to allow better smoke penetration.
Bearing in mind though that the 🪵 may have been quite strong so may have better smoke flavour than what I am used to.

Before I got my Weber Smoky Mountain I smoked packet briskets in my 22" Weber kettle grill and people said they were some of the best briskets they had ever eaten.
