Ha! I tried preppy kitchen first and came here after it flopped for me 5 times. I’ve had more luck with the 10 min stretch and pull and how you taught me to let the flour and water come together before I add the starter!

This is the method I use. It is extremely forgiving per timing. I use 100% Whole Wheat flour, thus my stretch & fold intervals are 30-40 minutes, instead of an hour. My breads always come out great with this method, no matter how many timing error I make. The flavor of the bread is awesome with this method.
Dear Emily, the sourdough Mommy. Can you please upload your starter series you had on TT? I was following that religiously and my starter is finally ready to bake and starting the process of using my starters. But I didn’t download your videos 😭 ugh
To increase chewy, bake entire time in Dutch oven. My adult daughter prefers chewy. You can also do the bagel trick and boil it two minutes per side in water with malt added ( or just water. ). It’s tricky to handle but makes it sooooo chewy maybe experiment with bagel size sourdough. Enjoy

I’ve done everything same as shown and it is now 4 hours & it has not risen much?? What can I do. I just put a towel around my container, it case it was cold? Any thoughts?
Sometimes when it’s cold it takes longer- my kitchen is usually 67 degrees and I can do up to 12 hours before it’s ready. If i want it faster I put it in my oven with the light on for some heat.
The crust might get chewier after 24 hours. After the loaf cools completely, I store mine in a plastic bread bag (that store bought bread comes in). The next day, the crust is softer & chewier. However, I use bread flour. That may make a difference.

I spray the bread top with water before I put it in the oven. The crust comes out perfectly crunchy but not hard that it breaks your teeth.

Could perhaps be your starter? Was it doubled before you used it?

I wish I could figure out how to make great sourdough but I realized that my family prefers my bread machine recipes so I gave up lol.

I would never go through so much trouble to make WHITE bread. Always whole wheat and no more than 3hrs, baking time included, no kneading.
Ur recipe is 50% hydration, thats extremely low, its why ur dough is a heavy blob when u tried stretching it. Dont u want an airy light bread??
