I have 2016 Excel and my pivot table doesn't look the same as yours. In order for me to change the name, I have click on the arrow by the name under Values and click Value Fields Settings.

This option is only available in a Standard PivotTable (not a Data Model PivotTable). If you make a PivotTable from the Data Model, it is not available: they assume you will use DAX. My suspicion is that you are trying to make a Calculated Field from a data Model PivotTable.

I have no idea!?!? If you have made a PivotTable, it should be available. This feature has been around for many years...
