      I thought that the fiber in whole wheat offsets the effect of absorption so it doesnt have such an impact as regular sugar ?
      Also...how do you feel about low carb tortilla called carb balance it's a lower carbohydrate bread. Or is it just as bad as regular ? The brand that makes it is mission", I think. Thank you for you help !

      Dr Ekberg, is it true that bread is better for you toasted, and if so in what way. Does toasting change anything about the bread and its molecular structure.

      @@lueveniapettiford2626 I'm not the doctor but the answer is Yes. Is related to advanced glycation end products. I personally don't think that external created AGE is a problem like on toast, since the conversion was done by the toaster. Problem is when you body produces them, as in diabetes.

    Sugar is one hell of a drug. One of the toughest addictions to beat, especially because it is completely socially accepted, and encouraged even... oh, and also, there's a dealer at every corner.

      I was mocked years ago for no longer taking sugar in tea... Im still partially mocked now for refusing cake and biscuits everyday. It's more socially acceptable to eat sugar than it is to not eat it

      I never noticed any withdrawals from sugar whatsoever. I kinda just stopped it completely with zero issue when I wanted to get to 130 lbs. And I ate loads of it before doing so.

    Dr. Eckberg personifies moderation in his delivery of health knowledge. Everything he says is verifiable, practical and so easy to comprehend. I've learned more watching his videos than i learned in any classroom setting about health. Keep up the good work.

    I do appreciate how clearly the problems with bread were pointed out. I do also think that Dr. Ekberg's evaluation of bread as means for nutrition might slightly differ if he would regard bread here in Germany. Whole grain, sour dough, Einkorn are widely available. The mentioned added chemicals will not be found in any german bread.

    When I was little, as a quick snack my mother would give me a "Bread Butter and Sugar" sandwich (white bread of course.) Then to make it healthier, she cut out the butter and substituted margarine.
    I think mom was trying to kill me.

    I am a kid of the 60's. For a sweet I used to have gobs of butter and tablespoon fulls of sugar. I don't know how I survived. I am 63 now 3 yrs of Dr. Ekberg and IF, lost 15 kilos, am perfectly fit. Much love from India. 🙂🙂🙂🙂🙂👏👏👍👍

    I do enjoy watching these videos and there is a lot to learn and take in. Sometimes too much information and that can be scary or overwhelming. Making a food diary is so underrated but I think everyone should do it. Write down what you ate and how you feel the next day. This way you can keep track of what foods work for you. Everyone is different so we need different diets.

    I already quit sugar for almost a year now... no softdrinks/catsup/refined sugar/junk foods/fastfood etc... the only thing I cant quit is Bread..... so I am still consuming sugar... but it is also in moderation... and I am also on One meal a day life style.. fresh baked plain bread is the only pleasure I can have by the end of the day 😌

    I stop sugar few years, but still sugar are in every food. Sometimes I stop to eat bread, I love bread, but gives me pain in head, I feel tired. Now I stop to eat for few months. When I stop to eat bread and I feel light, better with more energy.

    I don't have either. I stayed away from processed foods and drink and I fast a few days a week. I feel so much better and more energy. I exercise with weight and long walk daily and not thinking about food. The quickest way to loose weight.

    There is no straight YES or NO answer because we are all so very different. Many people are being "educated" about general nutritional facts but that doesn't mean each person knows his/her body facts! (sensitivities, intolerance, etc..) In short, keep carbs low, burn more fat, stay away from GMO's, and try to be stress-free!. Thank you Dr. Ekberg.

    Seems all the good things we like to eat or have eaten allot in the past have sugar. And that could raise our sugar levels or spike them. Too bad, because I really liked white breads no matter what form they were in. So now i dont eat any breads or grains and see how it goes when i visit my doctor in May 2022 with a new blood test. i am not diabetic, but i am following the same rules to get my weight down, and it is working.

    Thanks Dr Sten my wife and i have been following your guidelines and recommendations regarding diet change we are 61m & 49ish F.
    We have both within a couple of weeks LOST weight which was so hard for us to shift that lard, SLEEP longer and better & more regular in the plumbing dept, now feeling after many years on the RIGHT track.     I like bread & I'm not sensitive to it, but I never buy store bread. I make my own with non GMO unbleached bread flour & I use other flours too including buckwheat, quinoa, millet, spelt & sometimes rye. We eat about one loaf per week, mostly at breakfast. Now that I'm doing 16-8 IF, it is much later in the morning.

      Thank you Ann McNeal. I think that's just a manner of speaking. Rice is starch - amylose and amylopectin - long chains of sugar (glucose)

    Thank you. They say that anciant people had bread and milk, and honey (nordic people had honey liqer in the first month after wedding - the origine of the term "honeymoon" :)) and went without meat for days. But I did not know how much it is "enriched" and why is it bad today. GMO and pesticides of course

      I am looking for information about that too. I make sourdough bread with 40% whole wheat flour, salt and water, and it is delicious, but I decided to try to get along without it. Am researching if I will feel differently with no gluten in my diet. I cut it thin, and limit intake, but have no idea of calorie and carb content.

      @@drekberg wow really? it says only 12 grams of carbs so I thought it was within my allotted daily carbohydrate intake of less than 50gms a day. Unfortunately I ran out of my glucose test strips so I can't see how much of a spike it gave me along with my bacon and eggs

    I love white bread , breakfast & snack is white bread with coffee & fresh milk w/o sugar .& starting fasting now, eat bread & eggs in the morning, 8 pm eat a few rice till 12noon, haven’t eat . It’s ok ? to reduce belly fat or IR

    When you speak about bread, it's always about processed american bread. What about french bred ? The one who's made with natural yeast and flour of ancien wheat, non GMO. Is that also as bad as you describe what you can find in the US ?

    Yeah, but Dr. Eckberg, the 65 glycemic index for sugar is for 1 teaspoon or something like that, right? Whereas you get to eat a lot more bread for that 74-75 glycemic index. I'm not just eating a teaspoon of bread.

      It wasn’t very long time ago when I said I can’t live without bread. And now I have been on a low carb diet for one month now and I couldn’t never imagine that being without bread and also without fruits. I also loved fruits, but now I eat berries and it satisfies me. I have made keto tortillas and even the same tasting pancakes as with normal flour, but much more healthier.

      I have gone now about 2 and a half months, of no sugar and bread, so not that long.
      But I can say it's totally worth doing imo, and I would never go back, once you form the habit it becomes easier, the signals from your brain telling you to get a dopimine hit, from the sugar or bread get weaker with time.
      My advice is to purge the food cupboard and fridge, of the sugar, bread and whatever other carbs a person wants to get rid off, and for awhile, to avoid people or situations where sugar or bread is being consumed (the only time I had a craving for the sugar, I was around others, and they where eating chocolates and cakes, and my brain was telling me that I also wanted these foods, but I didn't, because I understood that it is just my brain trying to trick me, but avoiding those situations may help until the signals get weaker.
      And also, I have all my life had eczema on my hands, since cutting out the sugar and carbs they have healed for the first time, (I believe due to reducing inflammation).

    Back in the 1950s they also used radiation and mutating chemicals on wheat and corn to increase weight per acre. To help fainting due to hypoglycemia, have patients start consuming Ketones in a can, MCT (Medium Chain Triglycerides), or Coconut Oil (60-80% MCTs). The body will start metabolizing these even in the presence of glucose and will be able to use Ketones when glucose goes low.

    All wheat, except Einkorn, is hybridised, even Spelt and Emmer.

    What is your take on Keto bread. One that is available to us is Franz KETO white. It has 1 net carb (after subtracting 11 fibers) Ingredients include bread base. Is this acceptable on a Keto diet when you are wanting to loose weight or break insulin resistance? Thank you for all your videos. We have learned so much from you.

    Interesting. I've never had any real problem with pure sugar, it's all the other carbs that were supposed to be better for me that actually screw with my system.

    I make my own buckwheat bread (organic) and have 3 slices per day for breakfast. I would be interested to know how this effects my insulin. I add a small tablespoon of organic sugar when making the loaf (400gm of buckwheat) of which produces 18 slices so I eat 1/6th of a tablespoon of sugar. I understood that buckwheat is low glycemic

      Thank you Roy Eaton. Buckwheat is not a wheat at all it is not even a grain, but rather a seed. However it is as starchy as wheat and has a medium glycemic index (55). It is gluten free so it's safe for most allergies, but if you are reversing IR it is still pretty much like bread. You're getting 15-20 grams of carbs per slice which may be fine if you are insulin sensitive and active, but a bit much if you're not.

    I had a very bad sweet tooth it was destroying my teeth and my health I finally decided to give it up and I started eating bread I thought I was moving in the right direction now you're telling me bread is even worse than sugar? I can't win for losing.

    What about sourdough bread? I hear compared to other breads it might be better based on fermentation?

      Thank you Daniel. It is quite a bit better, especially if the fermentation has continued more than 24 hours. Fermentation neutralizes many of the antinutrients. However most of the issues discussed still apply.

      Daniel : Watch out for fakes. Yeast should not be an ingredient; merely an effect. Easy to make a sourdough starter with just unfortified flour and unfluoridated water. Numerous videos on YT, but be aware of the fakes.

    I have a question. I make my own bread with Einkorn flour and only water salt and olive oil. Is this safe to eat from a a non insulin spiking perspective? Is it overall ok to eat in combination with an overall healthy organic diet?

    Hi Dr. Ekberg! Thank you very much for this insightful video. I am doing intermittent fasting 36/12 but on days that I eat, I eat a lot of carbs and occasionally some sugary treats but I do avoid sugary drinks. My main diet is mostly rice and side dishes that contain proteins and vegetables. What interested me about this video is when you talked about "feeding the enemies" and I wonder if intermittent fasting can balance my gut flora despite me eating the foods that can feed the bad bacteria.

    I enjoy pumpernickel bread (European- not made with wheat) It is fermented in the first step, so I was wondering about your opinion on this. It breaks down to pentosans(five ring sugars) - not glucose. I am planning to check the response shortly using my glucosemeter for interest sake.

    Great video as usual Dr. Ekberg! One question though, I've heard from Dr. Gundry about the benefits of cooling starches like rice for a day in the fridge and reheating it the next day to get resistant starches that are not absorbed as glycogen in the body and instead get changed into fatty acids by bacteria in your small intestines. Is this true? Are there studies about this? It's really intriguing and might help understand why the Asian people get away with consuming tons of rice(they mostly eat it cooled down)

    The glycemic index is fine, but is it the same to eat 1 tea spoon of sugar than 10 slices or bread? The index is on a gram by gram basis?
