  • Chilli Crab is widely known to be Singapore’s national dish. In fact, some specifically call it Singaporean Chilli Crab or the king of all crab dishes.
    Most popular accounts say Singapore’s Madam Cher Yam Tian created the dish in the 1950s. But every few years, the dispute over dishes gets spicy between the two neighbouring countries. In the launch of its International Gourmet Festival in 2009, Malaysia claimed that other countries have hijacked their food and that Chilli Crab is Malaysian.
    So, did Singapore really take over a Malaysian dish? Host Chef Ming Tan picks through the shells to get to the meat of the matter: where is chilli crab from?

    As Indonesians, we also think that chilli crab is a special food from Singapore, not Malaysia, because many crab dishes in Indonesia use the name Singapore Sauce. Apart from that, Indonesia also has a special crab sauce called Padang Sauce.

    I think that it is clear. The national Singapore Chili Crab (with eggs) is the one invented in 1963. Indonesian version is completely different as it is called "Kepiting Saus Padang".

      ​@@hndrwn Minangkabau or Minang is a Malay tribe. The reason they are not recognised as a Malay in Indonesia is because Soekarno administration institutional racism strategy to divide Malay into smaller ethnicity. No debate about connection there

      @@ethos- Minangkabau have an entirely different culture from Malay. Their language maybe sound the same but it's not. Minangkabau are living in the mountain and Malay in the coastal. They have different traditional house and clothing. They are separated by Bukit Barisan which sometime its hard for them to communicate to each other in the past. Malay and Minangkabau is not about a "race" they are different ethnic group with different culture and heritages. Sorry if my English is so bad. Thx for reading this tldr text...

      @@rein4378 Minangkabau origin is from Malay Champa which is consider as one of Malay tribe. The dialect is different but they are Malay. We are talking a Malay base on actual definition which is an identity to Malay Realm not Indonesian Javanase doctrinized knowledge that change everything to belittle the Malays in Soekarno era. You can actually google for a better understanding

    I'm Malaysian too, and chilli crab is Singapore's dish.
    We have our own crab dish that is more widely found in Malaysian restaurants that is called Kam Heong Crab.

    What matters most is who does it better.
    When people hear ramen, it's associated with Japan but origin is from China
    Dim Sum, people know it is from HK but actually again from China, Guangdong

      Ya so is pasta or spaghetti, every noodle starts from China… 😂 but seriously nobody cares because the cooking methods are different so ramen will always be associated with Japan and spaghetti will always be associated with Italy. It’s meaningless and somewhat rude to be always saying it’s from China for every noodle available.

      ​@@ditsygirl5409 There's all sorts of variations of noodles in China and elsewhere in the world. It's certainly not rude to say that the origin of noodles come from China. You look at the amount of chilli the Chinese are eating and the variations of dishes they can make but at the end of the day, they all acknowledge that chilli comes from South America. Whereas for the famous kiwi fruit, do you know where it comes from? It's not NZ but China. Nothing rude about it, it's just acknowledgement of the roots of it all and respecting history.

      @@1ewi5 it’s rude when you try to remind people this noodle and that fruit is from China when it’s uncalled for. Chinese people lack social etiquette and think it’s ok to remind people when the identity of a particular noodle/food is already deeply associated with a country or culture and the Chinese start reminding others the origin is not from this country to gain superiority or upper hand over others. That’s the disgusting part.

    Everywhere has Chilli crab, but who popularised it? Singapore. Our crabs usually from Sri Lanka, the sauce with egg drops, the taste is very uniquely Singaporean.

      Exactly! It is the way the dish is prepared, the Crab and the sauce used & served. Sri Lankan Crabs are used to cook the Singapore Chilli Crabs! And even now, Mantou (previously using normal bread) is used to dip in for the sauce!

    I'm a Malaysian and loves food. I seriously don't care where chilli crab is originated. To me the best chilli crabs I have tasted is in Spore till now.happy eating guys.

    Maybe better to say that Singaporean chilli crab is originally from Singapore. If you trace through the coasts of Sumatra, Kalimantan, Sulawesi and other islands you would surprisingly find different local versions of chilli crabs...

    I think Singapore is where it is more widely sold. As a Penangite my mom often cook Chili Crab when I was little, but I don't recall anywhere selling them in Penang or throughout Malaysia except for being an obscure menu in Chinese stir fried stall

      Growing up in the early 60s in Penang, there are 2 restaurants selling chilli crabs. One near the Tua Pek Kong Temple at Tanjong Tokong & the other one near the Zheng He footprint temple at Batu Maung.
      The crabs would usually be the sea variety (Chiik in Hokkien) and not the mud crabs (Chiim).

      rempah is totally malay word, chinese chili crab have own style, but come from malay food, same with char keow toew is chinese food, but malay have own style, it come from chinese. nasi lemak come from malay peninsular, but chinese singaporean style is have own style. same with laksa etc. wan pure malay food, it in kelantan, terengganu and patani/southern thailand

      @@safuwanfauzi5014 Char Keow Teow Come especially from Teochew, but in Chaozhou the original version is very very different. So the more normally known is Overseas chinese. Then eventually teochew bring it to Thailand and called it Pad Thai Kway Teow

      because u will never try the Non-halal restaurants in Malaysia. Mud Crab is non halal, and Malaysian chinese love mud crabs over sea crabs.

You need to show proof of claim first that chilli crab exist in which restaurant beginning which date and year to claim authenticity. Cannot just use your mouth to claim like most Malaysian style.

    This dish look like curry crab in Thailand, you can find it in any restaurant , any open market, home cooking. In the school lunch they normally put only egg or no crab. At market near my home, sometime the seller put shrimp instead of crab

    Watching this series made me think almost every Food fight between Malaysian & Singaporean, there's always Indonesian lurking in the background saying "ummm, actually..."

      Nahh, not always. Most Indonesians love their heritage and ofc will try to defend if someone claims its theirs instead. However, we don't like to claim things which are in fact not ours. Its borderline embarrassing behavior. With Chili crab, it belongs to Singapore. We don't even try to claim it.

    I am Malaysian. Chili Crab definitely Singapore. We never liked it in fact, selling it only when foreign tourist started pouring into Malaysia. BTW we still do not think much of it..

      This is 100% true. We have never claimed Chili Crab as a Malaysian dish. AFAIK, it is not a Malaysian 'thing'. So I don't understand why this chef's fighting over it? Personally, I don't find it nearly as good as our Butter & Salted Egg Yolk Crab (Harm-Dan-Nai-Yau-Hai).

      I don't know which part of Malaysia you are from. Chilli Crab is a common dish around KL. Had since I was young, and chilli crab is more like a homemade dish, rather than a restaurant dish now. my mom only cooked chilli crabs at home. You are Malaysian, but which part? You don't think it is, does not mean it is not. Please don't throw your claim like that.

    I'm in my sixties. My parents were born in the 1930s, in Kuala Lumpur. They had always remembered having chilli crabs in their teenage years in the late 1940s after WWII. It was tough times for them, and chilli crabs were a rare treat that they couldnt forget.

    Malaysia and Singapore is the same similar country. Many Malaysian Chinese went to Singapore to stay and became PR which whoever invented the local dishes is the same. Because both countries have Chinese people. To whoever Singaporean or Malaysian argue about the food we eat, is even waste of time and no point. I am age 50 and when I am even age 7 my mother already cook chilli / ketchup crab is in our home cook menu, so is bak kut teh (black version)

      In the 50s and 60s and even nowadays, many Malaysians (or Chinese immigrants from China, came to work in the S'pore restaurants as kitchen helpers, there is also a possibility that they learned to cook certain dishes in S'pore and later went bk to M'sia to set up businesses. it is also possible that the people of both countries exchanged recipes. In fact ,during those period ,most Chinese were from mainland China, it is very common for them to hv relatives in S'pore,M'sia,Thailand and Indonesia.

    Some nearby countries will never be able to cook the true SG chilli crab because they do not allow the capture of any female crabs .. thus there will be no roe as expected in this dish.

    Good food is to be enjoyed. Singapore was part of Malaysia; with descendants from many countries. Probably many ladies in Malaysia and Singapore have created a dish with similar ingredients, just tweaked to the local taste buds.

    you should ask any nyonya family in Penang who willing to make this crab for you, we dont call chili crab, (i dont really know if there is a name of it.) because we only have one type of cooking crab.and we also add egg at last.
    it is nyonya cooking .

      Cannot wait to see what rubbish is dished out when the presenter covers nasi leamk... i am sure he will find a local guru who tells u that way back in the 1800s there is this Malay local doing it.... and he will bring us to a local bomoh with recors of his ancestor selling santan of peanuts or ikan bilis to the local nasi lemak inventor,
      LOL.

After all apart from eventually being two different nations, both countries share a common heritage, and generally whatever food there is amongst the people, it is bound to exist in both countries and sometimes 3 countries if you think of Indonesia for food like satay.

Singapore are just offspings of former Malaysians who opted out in 1963 to form a new country. We in Malaysia definitely have better chicken rice, bak kut teh, nasi lemak and roti canai (you guys called prata). And definitely much cheaper.

    tbh, if the ingredients are just tomato, chili which most households have, it's quite likely it could've existed long before these "creators". I added tomato to my rice when I was young without having eaten tomato rice before, just like how the sauce is added to bak chor mee, anybody could've experimented with it.

      @@andresloft because many people are searching for evidence. So, mdm Cher is the only one who can provide the proof that the dish was created in her restaurant in the 50s. In fact , many dishes might hv been created in one's own kitchen before it became popular in the restaurants but who can prove it? everyone is claiming that their grandmothers created the dishes, who knows?

      @@kaiserlow652 kudos to Mdm Cher for having photos. But these proof are societal history and there are also oral histories from the other part of the region disputing the claim.
      If beyond reasonable doubt, Madam Cher should have been awarded with a plaque acknowledging her as the creator, and till then Singapore should not claim ‘from Singapore’

      @@andresloft do you know that oral history interviews are also not very accurate? it is because many who were interviewed were also not very clear about it ,they only based on their memories and some even got the dates wrong too. some restaurants may hv started serving some dishes in the past and later included new dishes in their menu but they claimed they started selling that dish from the time they started the business. For example, the lohei dish which your transport minister claimed to be created by his grandfather - they started serving the 冈州鱼面(fish noodles),later served the raw fish dish ( which in the 30s, many cantonese and teochew Chinese eat in S'pore too but now it is banned in s'pore due to hygiene reasons) and later they improvised it and became the yusheng we eat today but who knows when? They claimed since the restaurant started in the 30s ,so this dish must be created by them. That restaurant could not even show pictures of the lohei dish even at a later date(if I am not wrong)

    Go all the way to Langkawi to find chili crab...wrong reference!...Just in KL it self there are plenty,...Wong Poh rest in PJ, Sai Gong rest in Kepong, Fatty crab in Wangsa Permai, B lui rest in Kepong any many more. Chili crab is easy to cook, cook many time at home too. No secret about this dish.

    When I lived in Dansara in Malaysia, I took a taxi and went somewhere to eat chili crab. I still can't forget the taste. I don't really like stick crabs, but my prejudice disappeared after eating chili crab.

    Honestly who cares. Singapore was a part of Malaysia. So obviously there's the similarities. How many Malay dishes Malaysia claim are actually Indonesian or hainanese Chicken rice . A Thai woman insisted to me it originated in Thailand. Like noodle's. She said Chinese noodles are yellow Thai noodles are white 😂. Couldn't believe my ears

    I don't know why Malaysian so eager to claim this and that. Some Indonesian would fight with words in internet when Malaysia claim something Indonesian, even with some scientific proof, Malaysian always and still claiming something. Example, Reog, or barongan.
    Some of us just already fed up with their claiming, but most of Indonesian know one thing for sure.
    That Malaysian themselves is came from Sumatra (Malaya), so we just like "eeeeeughhhhhhh... Them again...".

    Chilli crab was invented by the 4 Cantonese migrants heavenly king chef in Singapore. One of the early restaurant Cantonese chef set up 永春園 Wing Chun Yun at Upper East Coast road. Another chef heavily king also sell this in Red Star restaurant. That olden time, upper east road that stretch is a beach seaside.

    When I was a kid in the 60s, my dad used to bring us to eat chili crabs abd ginger baked crabs in a restaurant ran by a fat chef named Ah Luan in Malacca. The look and taste is exactly the same as that in Singapore. Ah Luan migrated to Singapore later. I believe the chili crab originated from him or chefs from Malaysia when they went over to Singapore for greener pastures.

    Chili Crab cooking palate have been eaten in the Philippines as Heirloom dishes in the Philippines as far as 17th century, especially in Manila and Cavite, where ingredients from the New World(Americas/Mexico and Peru) and Europe is being brought altogether. Many Heirloom Recipes of many Prominent Families from the Spanish Colonial Times, have been created during 17th-18th century where most of new ingredients first reached the Philippines before the rest of Asia thru Manila Galleon Trade.

    Bruce Lee invented Jeet Kune Do, Donny Yen popularized Wing Chun, and Ip Man is a practitioner of Wing Chun. Bruce Lee foundation is Wing Chun, but don't mind saying he invented Jeet Kune Do because he did. Do Jeet Kune Do have some technique from Wing Chun, i don't know? So, some old master invented Wing Chun. Chili crab is just a dish and many Chefs can invent something similar no matter where and when. They always say, "I invented it". Yes, you invented your version of Chili crab. Food or dishes always evolving all the time depending on styles, taste, popularity, etc. "Singapore Chili crab" is invented in Singapore and become popular. Malaysia Chili crab is invented in Malaysia and may not be so popular. As long as it taste good, I am all in for it. There is no answer to it, like someone came to you and said, i know the answer chicken came first and not the egg. Next will be Pan Mee, who invented it first? My son told me, there is no good Pan Mee if he study in overseas. I told him yes, eat as much as you like now and please go back to study. What research method does the food historian use to find their conclusion - I hope not by just eating a lot of Chili crabs and talking to people! and what supporting evidence is solid enuf to support the research? Can food historian wrong, of course! Can they be right, absolutely as long as they have good evidence the history of it origin. Find someone 1st generation from China migrated to South East Asia - if he/she alive and have eaten Chili crab before and you will know when this this dish was invented.

    All very good and fascinating . I had sticky crab at in Sg 12 years ago , epic .
    That said , the origin of Chilli crab is moot , with respect , only so many ways you can cook or season a crab :-) I make my own chilli paste grow lemon grass , my wok is not so impressive :-) Good fun though .

    Maybe their research missed the original and popular stores in KL/Klang which most don’t exist anymore, it’s been replaced by newer stores… I recall having chilli crabs with egg and love dipping steamed man tou into the sauce (which is what I liked the most) I do recall the owner saying that they didn’t originally have it with egg but to make the sauce thicker and silkier texture. The store was very popular in the early 60s and the cook was second generation, they went through a loss in the 70s as the store split to two shops don’t recall if it was a family member or someone who worked for the family. At that time Klang claimed it originated from there as Klang was famous for seafood and Bak Kut Teh. In fact it was originally know a chilli crabs there’s no regional title in front 😆 perhaps that came after when Singapore became independent from Malaya. Love your shows it’s very interesting. Hard for me to lean one way or the other as I have heritage from both sides of the border including Indonesia 😆 and a Nonya. Please bring more food fight stories. How about Yee Sang?

    Chili Crab is a singaporean dish. Because whenever I taste it in Malaysia, it has a weird taste to it. Like a fictional taste? That it adjust to suit a Malaysia palate. But when eat it in Singapore, yeah it taste like the original or taste like home. That's how I knew that it must be originally in Singapore. I'm Malaysia but I admit that this is Singaporean dish. Anyway I really love this channel. It teach or give us the knowledge of the roots of our dishes. I learn a lot. But what I don't like is the comment section where there will be a lot claim going on. Well I don't really care, but it does annoyed me. Just enjoy the shows
