There is an ingredient my dad told me was the best to add to mashed potatoes back in 1986. Ad a tablespoon or 2 of really hot horseradish to it while preparing. Gives a really nice flavor and kick. Enjoy!
I was raised on kennabec and still grow them, and mashed potatoes and scratch made gravy are the favorite side dish in my neck of the woods, and im gonna have to try your unique spin on the potatos, it sure sounds Mouth Watering.
Chef, is there a significant difference between adding the taters to preheated water and covering them with cold water and then bringing the whole thing to a boil?
Those are perfectly served cafeteria style. If they're good enough, I'm putting some in a solo cup with extra gravy and walking around eating them with a spoon as dessert.

Riser potatoes are not whipped potatoes. I like the whipped action to activate the gluten.
Potatoes always start in cold water. That's mashed potatoes 101 man, come on.
I could go for those taters and gravy as a stand alone meal.

I know you don't have to smoke everything...but could you put a little smoke on these taters? Cold smoke perhaps?
Finishing with Smoked salt will also help if there is no smoker available.
