If the server is unfederated, yes. This video details those instructions. If it is part of an enterprise deployment, no--you must use the Enterprise methods to "Share".
No, federated servers use the Portal to manage resources published. Just use the typical "Share" in ArcGIS products to do this. A stand-alone/non-federated Server is where you must follow special instructions.

I didn't understand how it works with the same feature source in 2 places.. one arcgis pro desktop and one in the arcgis server.. if you can explain it to me please. 2. This question connected to the first, how do I update and overwrite the service, if the feature source in to places.. Thanks!
In publishing data are copied from the ArcGIS Pro location and placed on the server. To update the data or change the service settings, use the same process and overwrite the existing service. You can avoid having the data copy by using an enterprise geodatabase referencing in your map on Pro and then registered in server, which is beyond scope of this video.
And another question possible, how to do this process with Query Feature Class (sql server)
