Can these clocks play different songs? Church bells at my house sometimes plays holiday music. Or is that because they could be electronically controlled. They aren’t speakers.

There may be many bells in the tower, able to play music like a piano. If there's enough bells (23+) it is called a carillon.
They don't make them like that now
Is it my imagination or is the fly for the chimes catching slightly on the gravity escapement? Ideally it shouldn't.
