I brew in ss all the time and it's never hurt my kombucha. The belief that ss will harm kombucha is an old, wives tale.
I don't think brewing in stainless is not possible or wrong. I just prefer glass.

Temporary contact with latex or the stainless racking cane isn't the same as leaving the brew in metal for 7-10 days.
I think you were noticing the metal faucet hose he was using to wash...the filling hose looks like rubber.
