    FYI. Sucrose (table sugar) is a disaccharide; a combination of two monosaccharides (glucose and fructose).

      And invertase breaks it into the monosaccharides. Glucose becomes gluconic acid. Fructose becomes acetic acid. Sucrose isn't technically needed for anything except those two simple sugars, so you could just add fructose and glucose instead of sucrose.

    I brew in ss all the time and it's never hurt my kombucha. The belief that ss will harm kombucha is an old, wives tale.

      I don't think brewing in stainless is not possible or wrong. I just prefer glass.

    At first I thought this was the guy from JARR. Sadly it's not. Adam actually knows his kombucha. Go watch that video, because he gives actual measurements and scientifically backed up advice.
    This guy doesn't even understand sugar that well. sad

      Temporary contact with latex or the stainless racking cane isn't the same as leaving the brew in metal for 7-10 days.

      I think you were noticing the metal faucet hose he was using to wash...the filling hose looks like rubber.

    He uses big words for a simple process. I usually hv lots respect for fellow kombucha brewers but boy.. this guy is sprouting $#&@!
