They used spices that we europeans today have forgotten about like sorrel and such.
Chives, mustard and ramson was also available in northern Europe but perhaps not known well enough to be used by your average person. Juniper would also be available in the in the nordic countries and was used in the Mediterranean.

Wait what? Romans were disgusted that Brittunculī, were a pasture society, feeding barbarically on meat and milk. They also contrast this by describing later the midlands being filled with "Corn" (likely millet), up until the highlands where "Corns" vanish. (the oats the Romans brought with them, were hardy and later became the crop of the people in the tough highland)

I wish I could experience this atleast once in my life. I would love to know how my ancestors survived live a day in their shoes perhaps. Anceint celtic culture is a very interesting time period for me I have read a lot and watched a lot of documentaries. I would be down to start a larping club if anyone is interested in joining me. I would love to meet others with similar interests. I live in the states and would love to get to know others around the world if not local who share my fascination for this time period.
