  • Kruegermann Pickles and Sauerkraut in LA makes over 250,000 pounds of sauerkraut each year. The shredded cabbage ferments for three to four weeks in Kruegermann's warehouse before it' sealed in a jar. The company also makes rotkohl and other pickled products.

    The 3 ways to preserve food in jars: Pickling (Vinegar and seasonings); Compote (Sugar and water) and Brine (Water and salt). In the olden days when there wasn't any electricity yet or neither refrigerators or freezers, foods were preserved with the aforementioned processes or meats were smoked. While most people think that Vinegar is only good for cleaning windows as a Windex substitute, vinegar preserves food like CEVICHE or KINILAW.

      As a native Russian, just the word "Compote" brings back childhood memories... Making the drink with homegrown mixed berries was a family tradition, especially with my grandparents. RIP.

      The basic recipe is cabbage, but all kinds of veggies can be added from onions, garlic, carrots, ginger, kale, turnips, hot peppers, basically if you can think of something to add, then by all means try it.

    sauerkraut is good and has many benefits when it's fermented and straight out of the jar, homemade or store canned, great for dieting, helps with digestion, i'm eating from a jar of sauerkraut watching this lol

      Try it with pork or corned beef sandwiches as a side dish. It really enhances the taste of lunch meats like pastrami, corned beef, and ham.

    Got to tour Frank's Sauerkraut factory here in Wisconsin. Found out I was allergic to cabbage from that tour.

    If this was made in India there would be a lot of comments about the hygiene. Those workers were not using anything for their mouth and they say Indians dont care about health issue.

      There is 2 ways to make sourkraut the wrong way with vinegar which tastes horrible or the natural way by simply adding salt which has a wonderful taste

    I love it. The only thing that killed it for me was the man inside the container stepping all over it. I mean, how clean are those boots? Does he walk around a dirty floor and then steps into the container? I think that step needs to be substituted with a machine or something.

      He is bruising the lettuce so it releases water. It's literally how the brine is made for sauerkrat and rotkahl are made, just like wine is.
