Sunflower Cookies (Tart Rosalinda)

Sunflower cookies or the real name of rosalinda tarts are Malaysian cookies. The original recipe of these cookies is topped with blueberry paste and decorated with icing. But I replaced it with pineapple paste and garnished using the separated cookie dough. It was popular in 2013.
Recipe
120 grams of butter
60 grams of refined sugar
1/2 an egg
1 tsp vanilla essence
40 grams of tapioca flour
35 grams of cornstarch
1/4 cwn custard flour
150 grams of medium protein wheat
Special blueberry or pineapple paste for cookies
For top decoration
Set aside a little of the dough that is ready to be mixed. Add butter/margarine and refined sugar. Mix well. Just an estimate.
