I went out to eat last night and was reminded as the dessert tray came around that I have been wanting to figure out a low carb key lime pie for years! I am a Florida native and as mentioned in another suggestion, have been a low carber since 1997. My favorite pie in the world is a key lime pie followed closely by sweet potato pie. I know making a low carb version of either is a challenge so if you want to tackle either or both it would be GREATLY appreciated and many would be eternally grateful (maybe not eternally but for a really long time 🙂) Thanking you in advance!

Keto Barista Milk (plant-based) I was just making a latte using a brand-name "Barista"-edition plant-based milk. I thought it should be easy to make your own with either homemade plant-based milk, or store-bought. It would be so much more affordable to turn 1 gal of Almond Milk to "Barista" blend vs buying off the shelf "Barista" blend.
Non fathead bread dough to use for pizza, rolls, etc. Nothing wrong with using vital wheat gluten and just enough sugar to actually activate the yeast which will eat most of the sugar anyway. Plenty of variations of fathead dough are available but if you could get a yeast bread dough without the heaviness of cheese and a bunch of almond flour. Not that some almond flour isn't ok, just when it's predominant, it's so heavy

Would also love to see if you guys have found a way to replace honey or molasses with a keto replacement, maybe with burnt allulose or your flavor drops from your culinary crystals.

I've not yet tried them, but konjac (or shirataki) pasta/noodles would be worth trying - the starch is glucomannan, supposedly 100% fibre... so 0 net carbs!
In terms of keto doughs I would love to see a puff pastry or croissant. This dough also looks like it could almost be a choux dough even though the process of making it is different. I will definitely need to get some of those special ingredients.
I was just asking recently about a keto fried breading recipe and this is a step in the right direction. Love pizza so i have to try it. buying the ingredients now. Please more keto videos we need the expertise. I'm still working on a good breading but I suspect a good breading might be similar to what you have here.. What do you think?

Just saw your interview with Seriously Keto. Great stuff. I have a food Chemistry question. What chemistry wise is happening when melted mozzarella is combined with whole eggs? Do you think any additives might help like Sodium Citrate to improve the results.
There isn't necessarily a chemical reaction happening with the eggs and mozzarella. Mostly the eggs are giving a bit of lift and the mozzarella is what is making it crispy. Sodium citrate is possible but we haven't attempted it so see. Might be a good test.

I grew up eating buttermilk biscuits and have been a low carb devotee since 1997 and a truly good replacement that has good rise and texture isn't out there. Help?! The possibilities are endless once you have the "canvas" of a good biscuit (sausage/egg/cheese biscuit, biscuits and gravy, etc.) Also, I know it may varry based on the size of the pizza but can you provide an approximate carb count for the pizza crust using the entire recipe - cut into 8 slices?
a really crusty Keto bread...think the crunch you get from a good baguette or sour dough. THAT is what I really miss on Keto. Between Scott and Steve from Serious Keto, I think the 2 of them can wrangle this!
