🛒 Ingredients (4 people):
🔸 6 large boiled eggs
🔹 150 g canned tuna in water (5.3 oz)
🔸 ½ onion
🔹 50 g sweet and sour pickles (5-6 pieces) (1.7 oz)
🔸 Fried tomato / homemade tomato sauce (4-5 tablespoons)
🔹 Salt
🔸 Pepper
🔹 A little grated cheese for gratin
Bell pepper béchamel sauce:
🔹 150 g canned piquillo peppers / roasted peppers (5,3 oz)
🔸 200 ml milk (¾ cup + 1 tsp)
🔹 25 g olive oil (1 tbsp + 1 tsp)
🔸 35 g all-purpose flour (¼ cup)
🔹 Salt
🔸 Pepper
*** For best results, it is advised to follow the quantity of ingredients in grams.
🍳 Directions:
1️⃣ Chop the onion finely and sauté, over low heat, with a little oil and a pinch of salt, until it is poached. Let it cool.
2️⃣ Cut the eggs in half and remove the yolks into a bowl. Crush them with a fork until they become crumbs.
3️⃣ Chop the pickles into very small pieces. In a bowl, put the drained tuna, the onion, the pickles and the yolks. Mix well. Add 4 tablespoons of tomato sauce and integrate. If you see that the mixture is too dry, add an extra tablespoon. Then, add a pinch of salt and pepper to taste.
4️⃣ Fill the eggs generously, rounding the overhanging filling with a spoon, making a small mound.
5️⃣ Mash the peppers with your blender to a fine puree.
6️⃣ In a saucepan, over low heat, add the olive oil. When it is hot, add the flour and cook, stirring constantly, for a couple of minutes. Add the hot milk, stirring constantly with the whisk. Next, add the bell pepper puree. Season with salt and pepper to taste and cook until it thickens.
7️⃣ Place béchamel sauce in the base of an baking dish. Place the eggs and pour bechamel sauce over each one until they are covered. Grate a little cheese on top of each one. Use the cheese you like best (I used a little parmesan).
8️⃣ With the oven preheated to 200 ºC / 390 ºF, heat only on top, grill until golden brown on the surface.
