I think if you wanted a recommendation for a newer artist to reconstruct, something from Oneohtrix Point Never could be interesting - he uses plunderphonic-style samples in a really interesting way and his work ranges from pretty simple (the stuff on Replica) to super layered (like in Garden of Delete).

This is truly amazing work! Recently I've being programming and playing a lot of 'Drill n Bass' drums with heavy use of rolls etc for a sampler thats about to start shipping so I really appreciate how much work must have gone into this 😅 I'll be sure to binge your other videos too 😁

Maybe really random but perhaps you could try recreating Opus No. 1 by Tim Carleton, also known as "the Cisco holding tune". It was made in 1989 and uses Alesis stuff so I think this could be potentially interesting to make a video about.
