Try "Survive the Hunt by Police" where players escape AI police on Italy map, the goal is to reach the airport, because cops dont spawn there.
Could you play the " infected " gameplay, or the "capture the flag" on beamMP with your buddies?

You should totally do it with more people, maybe have the hunters use different cars like off-roaders, trucks and super cars for different roles (Brute/Buffalo for heavy duty, Scout/Cheetah for sports car and etc)
Could be fun with mods too

This is exactly like JackUltraMotive's city camouflage. Very popular back during fh3. Idk where you got the idea from but Idc if it's copied. Loving it!

Same issue, I'd love a pc that can run beamng's AI, it would be nice even on the lowest graphics, as long as i'd get 60fps
I'd say if you want a lot of ai cars you need a good cpu, I myself have a i5 750 from 2010 and can run 4-5 cars total at about 20-25 fps. gpu doesn't need to be crazy good, a gtx970 like mine does the job.
He has the same PC as me an i5 13400f, 3060ti and 32GB of RAM
