    200-250g chicken breast (thinly sliced)
    1 tablespoon soy sauce
    1 tablespoon cornstarch
    1 teaspoon sesame oil (optional)
    A pinch of black pepper
    For the Chow Mein:
    300g egg noodles (boiled according to package instructions)
    2 tablespoons oil (vegetable or sesame)
    1 onion, thinly sliced
    1 cup cabbage, thinly shredded
    1/2 cup carrots, julienned
    1/2 cup bell peppers (red/green/yellow), thinly sliced
    3-4 cloves garlic, minced
    1 inch ginger, minced
    2 spring onions, chopped (for garnish)
    For the Sauce:
    2 tablespoons soy sauce (light or regular)
    1 tablespoon oyster sauce (optional but recommended)
    1 tablespoon hoisin sauce
    1 tablespoon chili sauce (adjust to taste)
    1 teaspoon sugar
    1 tablespoon vinegar (rice vinegar preferred)
    1/2 teaspoon white pepper (or black pepper)
    2 tablespoons chicken broth or water
    Instructions:
    Marinate the Chicken:
    In a small bowl, combine the thinly sliced chicken with soy sauce, cornstarch, sesame oil, and black pepper. Let it marinate for 15-20 minutes.
    Prepare the Noodles:
    Boil the noodles according to package instructions, drain them, and toss them with a bit of oil to prevent sticking. Set aside.
    Make the Sauce:
    In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, chili sauce, sugar, vinegar, white pepper, and chicken broth. Set aside.
    Cook the Chicken:
    Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.
    Stir-fry the marinated chicken until cooked through and lightly golden, about 4-5 minutes. Remove from the pan and set aside.
    Stir-Fry the Vegetables:
    In the same pan, add another tablespoon of oil and stir-fry the garlic and ginger until fragrant.
    Add the sliced onions, carrots, cabbage, and bell peppers. Stir-fry for 2-3 minutes until they are slightly tender but still crisp.
    Combine Everything:
    Add the cooked chicken back into the pan with the vegetables.
    Pour in the prepared sauce and stir to combine.
    Add the cooked noodles to the pan and toss everything together, making sure the sauce coats the noodles evenly.
    Serve:
    Garnish with chopped spring onions and serve hot.
