    Sourdough Bread Twist:
    2/3 cup whole milk
    3 T butter
    1 egg
    1/2 cup bubbly active sourdough starter
    2 T sugar
    2 1/2 cups unbleached flour
    1/2 tsp salt
    Warm the milk and 2 T butter in a small saucepan until butter is melted.
    Mix the egg, starter, and sugar in a separate bowl. Stir in the warm milk. Add the flour and salt. Continue mixing until a rough dough forms. Cover with a towel and let rest for 30 mins.
    After the dough has rested, knead for 6-8 mins or until soft and pulls away from the sides of the bowl. (If it seems to sticky, add a sprinkle of flour)
    Lightly oil your bowl and set the dough in, covering with a towel. Let it rest overnight (8-10 hours).
    The next morning, remove the dough onto a lightly oiled surface. Roll the dough into a large rectangle. Spread the filling over the dough, then roll up (starting on the short end).
    Chill until firm (about 30 mins - 1 hour).
    Using a sharp knife, halve the dough lengthwise to reveal inside layers, keeping the end intact. Crisscross the two halves with the layered section facing up. Continue crisscrossing until you have a full twist. Pinch the end to seal.
    Melt the remaining 1 T of butter, and brush the surface of the dough with it.
    Cover and let rest until puffy (about 1 hour).
    Bake at 400 for about 20 mins. Reduce the heat to 350 and bake for an additional 10-15 mins
    (If you're doing the chocolate version, I like to drizzle extra chocolate once cooled.)
