    Dude, what? They get 100% pay for work completed. Bonus pay is for workers that succeed expectations. The only (and I mean ONLY) times subtracting is acceptable is if your employees don't show up to work or not finish the work given.
    You are in no right keeping 20% of the profit as that is theft. If their job is to sweep the floors and they don't seem motivated, you are in the wrong from robbing them for all they did was do their job.

    I always pay my employees 100% of minimum wage !
    The point is that "100%" is completely arbitrary
