Oh yes for sure it would be fabulous for a wedding cake. Its fluffier than the butter cake. I love the flavor of a butter cake but this one is so nice and light.
I can’t wait to try this one! Were the filling and the icing on the outside both coconut cream cheese? What did you spread onto the bottom layer before the icing? Would this cake stack well?
Hi Joann, I spread a little Raspberry jam on the bottom then I believe it was buttercream , followed by lemon curd. . I had a little of this and a little of that leftover from previous cakes. Then as an after thought LOL I decided to use up my leftover coconut cream cheese icing around the sides. Hence the frosting of the sides after the top. The cake was amazing with the soft coconut cream and the coconut, lemon Raspberry flavors. My fave combo!
Yes it will stack just like any other cake. But you need to use cold cakes and dowels and cardboard rounds to support it. I personally have not used it yet for a wedding cake. I like to use my butter cake for those.
can I use almond milk? would this be suitable for a wedding cake or is it too fluffy? wondering if it may fall apart easier. for a 4 tier wedding cake.

Sure. I believe that will be just fine. Any liquid can be used to replace the milk.
