  • Today I'm making 2 new potato recipes that have been on my bucket list for awhile now.

    ⭐️COLCANNON
    4 large potatoes - cleaned and cut for boiling
    6 cups diced cabbage - bite sized pieces
    green onions - 1/4 cup diced green onions, 1/4 cup diced white ends
    1 -2 tbs butter
    salt and pepper to taste
    Boil potatoes in heavily salted water. Drain when tender, making sure to reserve some of the water. Cook cabbage and white ends of onion in butter with salt and pepper. Simmer a long time to develop flavor. Add in small amount of liquid from potato broth to prevent burning. Meanwhile mash potatoes to desired consistency. Then add in cabbage mixture. Top with additional finely cut green onions and pepper. Serve
    Colcannon cakes
    Mix 2 cups colcannon mixture with 1/4 cup flour and one beaten egg. Make patties with 1/4 cup measurer. Fry until golden brown. Tastes great with cheese on one side as seen in video.
    Optional-try adding in chickpea flour for more protein instead of regular flour.
    Tips: Add colcannon mixture to freezer for about 5-10 minutes before forming patties. Makes it easier to work with.

    Who ever gets you as their social worker is very lucky!!!! There is no challenge in life that cannot be made better and easier to deal with when you have nutritious food in your belly. Following your Chanel I have reduced our family food bill by hundreds of dollars a month. My two young adults are living at home and are able to go to university on full scholarships and will graduate with no debt. The nutritious food that I prepare for my family allows all of us to put in more hours of work and to have better mental health. You may not realize it but you are already a successful social worker to all that watch your channels. Thank you!!!!!!!

    I could totally see you being a social worker, thats emotional for sure. My granddaughter worked at a women's and children's shelter and took every story to heart. Your voice alone would give comfort to people who are hurting, I'm pretty sure you have a big heart. I'm glad you get a couple of days off with pay, that's always good.     ❤️❤️❤️ So funny thing… I am the Program Assistant for the Faculty of Social Work at the University in my city. You are going to be amazing.❤️❤️❤️
    Every time you post to cabbage recipe and I watch you chop it up, I think oh good another recipe I can use for coleslaw in a bag!!! Yes I am that lazy in the kitchen. If there is a shortcut, I am going to use it. These looked delicious.

      thank you so much for the vote of confidence 💜 it's good to be doing work that I believe in.
      I agree on the coleslaw in a bag. I believe in time savers in the kitchen, and especially now. Cabbage has been on a deep discount at my local market, otherwise I would be getting the bag kind. You'll laugh when you watch next weeks videos. 😂 A bag of coleslaw may be used.

    Idahoan Instant Potatoes are quite good. I keep them on hand for those times I want mashed potatoes and don't want to cook. I have tried all the different flavors and not been disappointed.

    A super hearty dish. In the spring we use dandelion greens with mashed potatoes and call it spring tonic. I don't know where that recipe comes from......necessity, perhaps.😂 note: only dandelion greens that have never been sprayed, then thoroughly washed should be used.....and..... know exactly what plant you are looking for.

    Colcannon or bubble and squeak are a great use for left over potatoes and cabbage - plus cabbage flavour is already developed.

    I use instant potatoes for thickening my potatoe soup. The garlic herb flavor is great in soup!! I make fried cabbage allot!!! My whole family loves it! The longer it cooks the better it gets!!! Thank you Michelle!!!! What a great way to spend this rainy Sunday morning here in VA!!!!❤❤❤

    Hello from Ireland.... My mam made this with curly kale every Halloween with a fried egg on top. But you have to wrap a coin (€2) in foil and bury it before serving😂. We would gobble it all up to try find coin. Followed by a barn brack cake to find it's ring❤🎉

    If you're a meat eater instead of butter you could fry up about 3-4 slices of bacon, remove bacon and use the bacon grease to fry cabbage. Then crumble bacon in with the potato/cabbage mixture. It's delicious!

    Adding extra pepper and onions to the potato cakes would definitely amp up the flavor, then try serving them with sour cream. That would be very close to Polish Potato Pancakes. We also serve them with applesauce but I think they're better with sour cream.

    If you use bacon dripping instead of butter to cook your cabbage in will give your dish a lot more flavor.

    My beautiful mother made this regularly for us when we were children. But she took it a step further and, where you finished it, she fried off the potatoes and cabbage, getting a lot of colour on it ....... I can taste it now, so, so yummy, thank you so much for your wonderful recipes.

    I've made a quick colcannon a few times now that's similar, but I actually add bacon bits! This also makes it heartier and more like a main dish. I first fry a few strips of bacon, then set aside. In the bacon fat, I start frying some onion and a generous amount of cabbage. I usually add a bit of water to help the cabbage steam and become softer. Then, once the cabbage is browned a bit, I'll add back in the bacon bits. As for the mashed potatoes, in a pinch I'll use instant mashed potatoes and I honestly think it tastes just as good as fresh potatoes. It's a 1 pot meal this way and it's super fast.

    Hi Michelle, I made Colcannon for St Patrick's Day. Added cut up bacon and made "buttermilk" using Greek yogurt. Fried in bacon drippings. WOW, thanks for this recipe! Very savory and great flavors!
    I couldn't cook for a month, bedridden. Then they put me on gluten free diet - feel better than in years. So today was a celebration! Hope you had a lovely St Pat's 🍀

    My husband's family is Irish. They make this recipe but have no idea where it came from. Now we know. It really is very good. I think I like your recipe better. Amazing. I am a huge fan of cabbage. My sister-in-law actually uses an Irish butter. Their grandparents still had a hint of Irish accent. Great side dish with Corned Beef or Bangers.

      I've never wanted to splurge for the Irish butter, but Google says it's tastier due to a higher fat content 😂 now I must try.

    Hi Michelle, I just came back from a three week trip to Poland. Potatoes and cabbage feature heavily in so many dishes. If you make your Colcannon and add mushrooms, saukraut and some beans( kidney works well), it would be the same as a lovely meal we had in Warsaw on the feast of the Epiphany. So yummy and Its a meal I have replicated since we got back home!❤

    Our made Colcannon when we were going up but she made it as a 1pot potatos and cabbage soup with just a very small amount of meat. I still make it today.

    I'm also looking forward to lunch Content. I make soup on weekend and take it for lunch daily. I heat it in a Pyrex dish in my Hot Logic Mini. Piping hot by lunchtime!

    Good morning Michelle, I make colcannon, I love it, my husband has Irish in his blood so I love Irish recipes. I never thought about making potato cakes with the leftovers, I'm trying that next time. I guess this week will be your full week at your new job.     I made cabbage and potatoes with onions and garlic and 2 Thai pepper no salt also cook separately beef bone for flavor after 8 hours slow cooking add beef bone and broth to potatoes and cabbage, I can eat for 4 days drink water so satisfying.

    I made a random cabbage side yesterday to use up leftover. Caggabe with shredded carrots slow cooked in chicken broth with a little vinegar and seasonings reminiscent of kimchi without fermenting. My husband ate a lot of it! What an affordable dish!

    My mother always made her salmon cakes( patties, croquettes…what ever you want to call them) out of leftover cream potatoes. She would add canned salmon, diced green onion, fresh minced parsley and seasoning, along with an egg to bind them. Then she would coat them with flour, before frying them. They were so good.

    Try serving the salmon patties over some different green lettuces that have been tossed in a lemon vinaigrette or balsamic. Oh so good.

    Those instant potatoes are delicious better than the once we get here in south Africa. We use to get those and they just disappeared from the stores 😢

    I'm eating fried potato patties right now! We had hot dogs the night before so I chopped those up and added them as well, along with grated carrot, sweetcorn, chopped onion and grated zucchini. We also added grated cheese, it's so good! I'll try chickpea flour next time.

    The colcannon sounds delicious! I love your videos and really appreciate that you’re able to keep making them while working, too! An easy potato dish I make weekly is to cut potatoes in half lengthwise, roast with olive oil and salt, cut side down, at 425 for about 30 to 40 minutes. On a second pan, when the potatoes are just about ready, I have cut up broccoli with a little oil, salt and pepper. When everything is done, I put in big bowls, mash with a little mayo (my addiction!), a little extra olive oil, and throw in some thawed baby green peas. Sometimes add green onion. This is a super easy, meatless supper that is delicious!

      Yes, it comes out like a room temp potato salad with broccoli and peas. It’s so simple, but it is yummy!!

      I agree. Even haluski itself has so many variations. Some with noodles and some versions with potato dumplings.

    I've had colcannon as a kid, I remember it having a strong spring onion flavour so they must have used a lot in their recepie, it also had diced ham. The cakes were like a bubble and squeak. Thanks for reminding me about colcannon.

      Were you the one that told me to try the Dollar Tree Louisiana hot sauce? I did get it, and I'll be showing it in the next video. Although, I think there were actually 2 kinds of Louisiana hot sauce and I wasn't sure which one to get.
      I'm so so sorry you are dealing with chemotherapy. That's so rough. I'm sending up some prayers for you for speedy healing 🙏💜

      Yes, I am "the one." Thanks for your prayers and all you do. I finished radiation one week ago. Focused on physical therapy for lymphedema and then construction.

    I grew up on this stuff, it was always made with leftovers. I never remember cream or buttermilk being added. 🇮🇪🇮🇪🇮🇪

    Hi, AM. Have you ever made peanut butter candy (made with left-over mashed potatoes). So delicious! I remember in high school, some students would bring this to bake sales. It sold out immediately. There are lots of recipes on line. Hope you try it! ~ Best wishes in your new job!

    You should also try Bramborak. It's a Czech potato pancake. Sort of like latke but a little different We did, and still do, make latkes as a smaller individual serve but my family have bramborak as a giant family size pancake, making just 1 in a pyrex pie dish to share. My grandmother was half Czech.

    So I LOVE Colcannon but the version I make contains long braised Irish Bacon which can be hard to get in the US. So I’ve used a small “Nugget Ham” I’ve found at Whole Foods or even Corned Beef. They get cooked separately and chopped then added to the potatoes and cabbage. I’ve used that square can of corned beef broken into small pieces because just a little has enough salt to make it pop. Then there’s Champ which is just potatoes and green onions and chives. (Maybe leeks if you wanted.) Have never used buttermilk but melting butter butter on the top before serving is apparently mandatory lol. Looking forward to your second half…

    In the taco you probably need a bit of tomato for acidity and raw cabbage for crunch!

    Michelle, next time you try the cabbage/potato dish, fry up some bacon till crisp, crumble it and set aside. then cook your cabbage and onion in some bacon drippings and add that to your potatoes. Top with cooked bacon crumbles. You won’t be able to stay out of it! 😂 (the same technique is also delicious if you use sauerkraut instead of cabbage)

    Potatoes have gotten a bad rap for some time now. They are perfectly healthy in moderation and will always make a complete protein when teamed with dairy.
    "Soured milk", (milk with lemon juice or vinegar added), can be a decent substitute for buttermilk in most recipes, especially ones that need to rise using baking soda.

    Save the roots from your green onions and plant them in a pot. I do it about two or three times a year and have plenty of green onions in my garden.:) Blessings~

    Класний рецепт. Єдине що дивує. В моїй країні картоплю чистять від шкірки особливо для пюре. Ніколи не куштувала пюре з неочищеної картоплі. Напевно в шкірці багато вітамінів. Спрабую. Дякую за відео. Привіт з України❤

    Look up a pie called, Star gazey pie, from the movie 🎥 ladies of lavender. It was a meal of filling like a shepherd pie. But, using fish that was caught by fisherman, potato 🥔 vegetables. Fish head's poking from pie crust looking up towards the heavens hence the name. Totally butchered the Name, but close... stargazing pie. As history from an poor European fisherman island I believe

      Stargazey pie is corniche. It's made with sardines, and the heads poke out of the crust so the rich oil drips down into the pie. I don't think anybody really eats it nowadays!

    CROCKPOT FRENCH ONION SOUP
    You'll Need
    3 pounds yellow onions, peeled, cut in half and thinly sliced
    2 tablespoons unsalted butter, melted
    2 tablespoons olive oil
    2 ½ teaspoons kosher salt
    ½ teaspoon freshly ground black pepper, or more to taste
    2 sprigs fresh thyme
    ¼ cup balsamic vinegar
    8 cups (2 32-ounce cartons) beef broth
    ⅓ cup brandy, optional but recommended
    4 to 6 baguette slices, toasted (1 slice per bowl)
    1 ⅓ to 2 cups grated Gruyere cheese (⅓ cup per bowl)
    How To
    Put the onion slices in a 5-quart (or larger) slow cooker, along with the butter, olive oil, salt, and black pepper. you can put as much onions as your crock pot/slow cooker will hold because they cook down and then divide for recipes! Cover the crockpot and cook on low overnight, or for 10-12 hours. The onions should be dark golden brown and soft. Add the beef broth, balsamic vinegar, and fresh thyme. Cover and continue cooking on low for 6 to 8 hours. Season to taste with additional salt and pepper, if desired, and stir in the brandy, if using. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).In evenly-portioned amounts, ladle the soup into oven-safe bowls. Place the bowls on a baking sheet to catch any spills while in the oven. Top each bowl with a baguette slice and the shredded Gruyere. Bake for 20 to 30 minutes, until the cheese is completely melted. Turn the oven to broil and brown the tops for 2 to 3 minutes, or until the cheese is bubbling and browned. Remove from the oven and let cool for a few minutes before enjoying!
    I usually just do a baking sheet full of sliced French bread with garlic butter and any cheese on them that we have since we usually eat 2 or 3 slices when eating one or 2 bowls of French Onion soup. I do not bother with the broiler because I don't like my bread crusty or hard
    Oh, this soup looks SO good, don't you agree? We love having it do all the work while we take care of other things on our to-do lists. Have you ever made French onion soup in the slow cooker before? Do you have any tricks of your own for making the classic dish at home?

      I'm going to be finding this soon and publishing on the recipes channel. I actually did 2 videos with potatoes, one with French fries and the other with soft potatoes. They were both good, but in this video I was referring to the soft potato tacos.

    In your last video you had said if you stop making videos that you would turn off the subscription options on UA-cam and patron and I think that's a wrong decision. If you have two kids you paid investment into the videos and they would be considered dividends to you. It's not hard to update your pattern subscribers like you'd update your Facebook. That would be enough to have it. And like you said anyone can unsubscribe the pattern or UA-cam subscription so it's really their option. Nobody would know if they left but you and them. It's not like there's an announcement like at the airport of their departure
