Ha! It's very hard to peel jackfruits everytime we harvest. You need to make sure that the stem (pedicel) is soft going inside and that takes a lot of practice. A ripe jackfruit is easier to cut unless the stem is as hard as wood lol. Then you need to oil your knife or jungle bolo to avoid latex sap from sticking to it. Hard to remove that when it dries up even with steel wool. Once ready to peal each pods out. I oil my hands because those latex again will stick and no I don't have long nails lol. It's not realistic for a farmer to have long nails. We have fake acrylics for that now. To remove the smell of the fruit from your hand, save the outer spiky skin like a bowl and fill up with water. I rinse my hand there to remove most of the smell. It's how we remove the smell of durian too. At least to some extent if not all. 😂

In India, jackfruit is never cut open at streets. They are sold as whole fruit. Use of gloves is a must when cutting this fruit - the white fluid oozing out is a gum, very difficult to remove. You will need to rub with an oil,several minutes. Yet, as an Indian, I find it disgusting to see that most street-food vendors here are not using gloves. Their target-customers are not visitors from other countries.

Oh my God this fragrant fruit is crazy sweet and so delicious.. you can't hide the fragrance of a ripe Jackfruit.. it fills the whole house.. And those seeds we boil in salt water in a pressure cooker and just peel and eat.. so yummy.. just ordering.. Also please apply a good quantity of oil to your hands/gloves and knife as the fruit is extremely sticky..

I haven't ate this fruit for over fifty years. Fify years ago where I lived we had jackfruit trees. We never harvested the jackfruit in this manner, the jackfruit was tree ripened, sweet and delicious. The seeds were boiled and eaten. What's happening here is wrong, no need for the chemicals.

The insides look way too stiff for it to be that ripe color, the once here almost becomes gooey after it ripes and they taste so good and the "ripe" once that i buy from the market is just bad and doesnt even taste good, their insides looks like this as well, stiff core and doesn't taste good. The ones that i get from my plot taste like honey. It's super tasty and sweet, like honey. These ones should mostly taste mid at best.

If u heat the knife on open flame n wipe it immediately with a thick rag cloth or thick tissue it will clean the dried up latex easily .

The insides look way too stiff for it to be that ripe color, the once here almost becomes gooey after it ripes and they taste so good and the "ripe" once that i buy from the market is just bad and doesnt even taste good, their insides looks like this as well, stiff core and doesn't taste good.
The ones that i get from my plot taste like honey. It's super tasty and sweet, like honey.
These ones should mostly taste mid at best.

Only the green jackfruit has that milky sap. When green it's often used in cooking, for savoury dishes. When ripe, it is sweet and has a strong and characteristic smell. It has two variants, with a more soft and jellylike meat or a hard and with more crunchyness meat. Awsome fruit.

#from my side...we use to prepare same like dal or meshing as salsa or direct fry with lemon tea snacks❤.....wont text more but got lots of memories, like when i was about 6 or 7 years old( 1992) belonging from a backward village, i ate whole fruit, and at night i wailed as fox 😂....my granny bathe me and applied kerosine on my tummy.....keep quit abouuu keep quit, patience 😂❤❤❤❤after that she told me story and i slept.....next day next level move....wish could go back in childhood life❤
