I am Italian and I usually do my pasta salad with cherry tomatoes confit: put them in a pan with olive oil, brown sugar, fresh Thyme or basil. Cooked them till they caramelize. Then I toss the pasta and add the other ingredients. Try it, it’s delicious 😊

made this with cannelini beans instead of pasta (simply because I didn't have any short pasta on hand) and it was utterly delicious - both warm and chilled! also highly recommend the amore sun dried tomato paste in this rather than chopping up jarred tomatoes; I always have it on hand cause it adds such a lovely depth to many dishes. it disolves into the "dressing" but adds tons of flavor
i love tomato paste, and i didn't think about this sub but it's genius. what the sundried tomatoes are adding is basically the same thing that tomato paste adds, it's just heterogenous sweetness, acidity, and umami rather than those things homogeneously incorporated. also, i love the small amount of chewiness it adds.
Supermarkets in the Netherlands have an option between sundried and semi-sundried tomato and I infinitely prefer the latter because it is indentical in flavour but more juicy and soft. So for people still on the fence about sundried tomatoes, try to get the semi dried version !

I make a very similar version of this pasta salad too. I go crazy with herbs so I blend sun dried tomatoes and mix that with pesto to make sun dried tomato pesto, one of the best things in the world. Then I also add some chopped parsley at the end. 10/10 great summer dish when people don’t want to stand next to a hot stove for 2 hours.

Sun dried tomatoes are my “secret ingredient” in pizza sauce , some bean dishes , and sometimes I even throw them into marinara or bolognese. Any time I want a concentrated tomato flavor without the added bulk or liquid of tomatoes (and without the acidity of tomato paste) I use sun dried tomatoes. I use both the oil pack type and the dried, reconstituting the latter in water or stock or wine or even milk, or a mixture of any of those. Thanks for posting this pasta salad video, agree it’s lovely to find one without mayonnaise.
Made this today and I added mixed marinated olives instead of capers (because I didn't have capers not to mention I LOVE olives plus these needed using up) 10/10 unreal. My new summer obsession and as Alison promised I WILL be bringing this to every function

Yes on the Campanelle pasta! It was my fave for pasta salad but I now alternate it or mix it with with Barilla chick pea rotini for the added protein. Yes too on Cento brand goodies. I wonder through that section adding all kinds of goodies to my pantry. .. So many delicious discoveries in that preserved section . This recipe is so simple, yet the taste is so rich and complex! With the Norwegian tomatoes being in season. This is my new summer favorite!
