This recipe is so good. I prepare it frequently. Today, I cut up the mushrooms into strips and added onion and green peppers. All the veggies absorbed the flavor of the sauce, which is awesome. This made a wonderful fajita filling. I topped it with ranch dressing...mmmmm good.

That looks awesome, I'm going to try that tomorrow for dinner! The only way I have ever cooked them is cut up and saute'ed in a pan, with butter, red onion, salt and pepper. The balsamic vinegar must add a fantastic flavor! Can't wait to try your recipe!
I'm have made them like " chicken fried steak"
20ish years ago I wanted some chicken fried steak, what I had on hand was a few large portabella mushrooms. So I just treated them like I would with chicken breast. I also made a milk gravy to pour over them. Wonderful meal. I have not yet tried making this gluten free, but I should.
I found that there was way to little liquid here (1 tbsp vinegar + 2 tbsp red wine + 2 tbsp soy sauce). It quickly evaporated in the pan and I had to keep adding water to it. I used Aceto Balsamico di Modena, Merlot, and Yamasa Japanese soy sauce.

@92luster They are removed if you do not want the mushroom to color the other food you are cooking with them. The spores from the gills tend to make the food a grayish color. For pan or grill frying, removal is not necessary.
Why do you cook with the gills under the cap. I find it gives it a muddy taste. Should I leave it for nutritional value?
Clean it well it shouldn't taste they way and it should cook all the eay through

I gave this an honest try, but I'm not real impressed with the flavor or texture. I was concerned when I saw the lid put on because it effectively steams the mushroom, but the sauce is more of a saute mix. This might be decent if done as more of a saute.
I have 4 big mushroom caps to use. Will be using this recipe and stuffing them with kimchi. ^_^

Looks good, but remove the gills on the underside with a spoon. Portobello mushroom gills gives a muddy flavour you do not want. Also I would cut back the stem a tad further as its woody in texturue.

If you are looking for cancer prevention, go ahead and remove the stems, but cook them on the side and eat them! They have 4 times the cancer-destroying agent than the tops!

One change to your recipe; discard the soy. In its place use another liquid that, when combined with mushrooms (any kind), is a marriage made in Heaven. No, the liquid is not wine, rather, it's Teriyaki sauce. I use Kikkoman brand because its available anywhere. As far as leaving or removing the gills. This is a personal preference governed by your own taste buds. Cook two large portabellas, one with gills, one without. See which you like best.
