The problem is the bug causing it to take no visible damage from standard MGs. That leaves you with a few options: cockpit snipe the pilot using standard MGs, hit the jet with explosive MG/cannons, hit it with a missile or, my favorite, drop a bomb.
I’m disappointed that I can’t find good fights such as this. Most of the time I fight are Oppressor MK2 users which is really boring. The MK2 should be removed

I always found it interesting when I defeat a Raiju using a Seabreeze, Molotok or Nokota and then they say I'm trash.
