About the European lobster : the texture is definitely due to the lack of freshness. You should avoid such « exported » purchases. They’re never good. If you do want to remediate to that, you ought to travel to the initial source of the product. It will definitely be worth it !

Hey Sonny! Thank you so much for visiting Taiwan, love your videos. I really recommend you to try touring/visiting other parts of Taiwan such as Kaohsiung or Taitung! The cuisine there can vary and there are so many different yummy delights all over the country, not just in Taipei!
French blue lobster is amazing, but the dead or frozen thing you had was probably frozen for months or years and lost water... Go to france and get some propper lobster, sea spider or tourteau

In Taiwan, cooking seafood by 熱炒 is relatively common and cheap. Those who want to pay more attention to details should go to specialized restaurants and seafood restaurants. I recommend the chicken soup and Yilan 甕仔雞, if you come last time.
