When they said "we are mountain people, we are rustic" that spoke to my heart. I'm from a part of the United States called "Appalachia" and even though it's not a formal "state" it is a certain kind of cultural identity. We are often called "mountain folk" or "hill folk" (sometimes less complimentary "red neck" or "hillbillies") and though we come from different places -- we share a similar spirit. I studied Mandarin for several years and can pick up the little i know here and there but sometimes I feel when I listen to your grandma she is speaking in dialect....but in a dialect similar to my own native dialect-Hmong. What I love about this sausages is the fact that the longer they hang dry the better. It intensifies the flavour and prolongs their shelf life(not that you would actually put them in a shelf). 😅
