Yum! It’s 5:30 am and I wish I had a couple of these.
So good to see Joseph again! I can understand why he loves these potato skins...I would too! When you rubbed the oil on the potato it reminded me of when I was a kid. My Mom always rubbed bacon fat on hers. Don't know if it gave much of a difference in taste but it was a great way to use up her bacon fat.
I remember those days...my mom used to have us rub Crisco all over the outside...I don't use anything now...just bake them in foil.

I can make a meal out of these. I make these using the microwave to cook my potatoes. Didn't think of using the oven to crisp them up. I usually fry them for that.

I made these many years ago when I lived in myrtle beach sc back in first part of the 80's my friend and I had cook outs and made these with our steaks or barbecue ribs and we stuffed them good too called twice baked potatoes. Everyone loved our potatoes. 😉❤ bringing back memories there Catherine, Tks alot and they look good 👍
