    Grew up catching these. But never ate them, parents used to back in the day, whole fried. Thanks for bringing back the memories!

      I try to go at least once a year and somehow it’s still as fun as it was as a kid. They’re actually really good eating as well

    Welcome home! I make similar butterflied fish sandwiches with several types of fresh water panfish. The kids love them! Definitely Kewpie mayo for me amd mine. Thanks for sharing. Your recipes always inspire me.

    Will, great video again. I'm gonna try this with a couple of the smaller grunts I get sometimes. I love the deconstructed tarter sauce feel of it. I'll let you know how it goes. Keep making great stuff!

    Another excellent fish and cook vid. Thank you. Difficult to know for sure from a quick look in a bucket, but probably a hickory shad. I catch a good number of those on the north shore of LI, and they are legal (limit 5).

      @@CookingWithClams it’s crazy how different spices and sauces are from west coast to east coast. I live in Washington state an hour from the coast. The fishing and hunting is entirely different as well.

    As far as Mayo, I use Dukes when I need a lot, but the best Mayo is Kewpie! I use Kewpie for everything, except egg salad or potato salad. Things that require more mayo bc Kewpie is kind of expensive.

    Kewpie mayo but not the one that you find at the grocery store. You have to go to an Asian market and get the one in the plastic bag.

      Essentially yes that’s tarter sauce just needs a little lemon and vinegar. I was having a play on a Scandinavian and Dutch herring dish where it has diced onion and Gerkins on it

      Ireland had sold a lot their fishing rights to Spain. So the tuna quota had been met. So when Captain Johnny caught that tuna it was in an illegal fish even though he was an Irishman fishing on his own grounds. He decided to keep the fish to make a point. The police were waiting for him at the dock, but so were the newspaper reporters. They let him have his moment, take some pictures and then arrested him.

      We have two kinds. Hickory and American. Hickory you can keep American you can’t but they look SO similar
