I watched this several times and meticulously followed all directions. When I rolled the balls, they looked perfect. I checked the temperature of the oil too. For some reason, after they started to expand a little bit, they flattened out, became ragged at the edges, and eventually almost half of them fell completely apart in the oil, even though I never touched them directly. The 10 that barely held together in the oil ended up much too soft in the syrup. What could have caused this? Did I possibly have had too much moisture in my dough? Maybe I needed to evaporate more moisture from the instant khoya that is part of this recipe. Might I try adding less milk or ghee, or adding more maida to the dough? I've tried other recipes for this and I have had mixed, unpredictable results.

The khoya looked exactly like your video, like dough.But once I removed it from pan and tried to knead it, it became like sooji and I couldn't knead it. I went ahead and added maida anyway. Needed a little more. Had to use many spoons of milk and formed a dough. Frying was a disaster! The oil foamed and foamed reaching to the top oh kadai. It was white foam and I couldn't see the gulab jamuns. I tried to rotate them that is when the outer set of jamuns ( I think I put too many. You said to fry them all at once) coming into contact with the spatula for turning and literally dissolved into a million pieces! I have now 4 or 5 round ones and a million pieces sitting in the syrup. ☹️☹️☹️
I made these today and turned out really bad. The dough was uncooked from inside though over cooked from outside. I followed all instructions and the dough was fine but during and after frying it was a complete bummer. Didn't taste good, highly disappointed. 🙁
Sir can you please tell that, can I use nestle everyday milk powder for these gulab jamun bcz I have no other option insted of this milk powder. Plzzz reply sir.

mstalcup the reason can be qyantity of baking powder
And make sure to use baking powder not baking soda

when i tried this ghee got separated with rest of ingredients after the mixture had boiled :/
Can we use unsalted butter instead of ghee? As ghee is not available here.
