I had a Japanese mom and learned so much from her and ate so many delicious foods and really learned to appreciate different foods and I think kids of Asian, European etc decent are so lucky to have such a diverse food palate ! For anyone wondering how to make this. Pretty much the base is this: make yourself Lemonade, or more specifically for this limenade: lime juice, water and sugar . Then from there you add your diced or perfferably crushed chillies and garlic. Want more heat add more chillies. Want it more garlicky add more garlic. (In other Asian cultures we'd even use more chillies and garlic to make it more of a chucky chilli paste or salsa rather than a liquid one.) And then add the fish sauce last and add till your desired umamy and salty preference. You want to taste everything: sweet sour, spicy, fishy, salty.
Love it. I make mine the same way having a great teacher, a Cambodian/ Vietnamese colleague 25 years ago. You forgot to mention the garlic your mum is crushing before pouring in the fish sauce.
Nuoc Cham will always be my favorite dipping sauce. We used to make it so often when I was growing up I could do it with my eyes closed lol. No measurements either. That’s the best way. Would love to see more Vietnamese food. I can’t get it from my grandma anymore.
I think it would be nice to refer to the original ethnic names of the sauce? It’s super common in Southeast Asia. I believe it would be “jeow som” in lao, “nuoc cham” in viet, “prik nam pla” in thai, etc.

I JUST MADE THIS for the first time the other day for grilled chicken & sticky rice! Only thing I did different was used a CRAP TON of chopped cilantro as well, it really is the best!!! So yummy
