    I've made these several times already and I love them! I'm a bit on the impatient side, so I've made a small short cut on this recipe. I don't cook the eggwhites until completely dry. I just cook them until done because the extra moisture helps when blending with an older, 2-speed blender. I found that I don't need as much HWC at the end. I also double the garlic powder and the fresh mozzarella. I don't add the eggwhite powder at the end. I think it tastes better because I don't care for that EW powder flavor. The EW powder gives it more stiff, mashed potato consistency, but I like the softer, creamier mash. You might want to taste it first before adding the EW powder at the end. You could remove a small portion, add a little EW powder in and taste it to see which one you prefer.
    Once it's refrigerated, it will become a stiff gelatin, but it will soften back up in the microwave. Add a little water to it to prevent it from becoming chunky or heat it at 50% power. Overheating will cause it to get a few chunks. It doesn't change the flavor but the consistency will resemble a chunky-type mash, which might bother some people.
    Overall, this recipe is a winner and I make a half-batch every week. I find that it curbs hunger for hours and doesn't cause gas or bloating like cauliflower mash. I also toasted a half cup of gelatin powder and keep it in a spice jar. Having it readily available cuts out a laborious step in this recipe.

      @@angies5082 I'm pretty sure it's around 3-3.5 cups depending upon how much HWC, extra mozzarella, and cream cheese you add. I know a full 32oz carton of eggs makes at least 5 cups of mash. My blender only goes to 5 cups and it was over that line.
      One thing you'll find is that these are very rich and filling and the half batch is more than enough for several meals for one person. Add butter or gravy and these are heavenly!

    Chris had a comment at his video where someone said to use a potato masher in the pan of egg whites at the end to get the water out. I tried it and they were right. That really presses out the water to dry out the eggs. Highly recommended.

    I made his potato salad and it really was amazing! I was also hesitant about all the steps, but it really did come together. He said that the toasted gelatin adds an earthy flavor to the mix like a real potato gets from the ground, which makes them taste legit. I used my Grandma's potato salad sauce recipe and then served some to my Mom. She usually says, "that's OK for Keto", but on this one she went back for seconds! Thank you for showing that anyone can try these outside-the-box recipes.

    I barely use the microwave but when I do it’s typically to cook my liquid eggs. Cooks then to perfect dry perfection.

    I have now made Chris's potatoes twice. I love them! It's not as hard as it might seem to keep the egg whites from getting brown. The only thing I did different was by put half of the egg whites in the blender and then top them with the cheese and mixed before I put on the rest of the egg whites. I only did this because I could just envision the cheese getting gunky on the blades of the blender.

    Think potato pancakes, tots... omg I'm so glad you ladies tested this out & love it! I've been on the fence with trying this process afraid of buying the ingredients & failing...I feel like my cooking skills are similar to you ladies & so I feel more confident trying it now since yours turned out so well. The fact the flavor is spot on is exciting!! Chris's recipes are becoming some of my favorites in the carnivore space! I an experimenting with carnivore, because keto worked for me but I hit a standstill for months & still have more to get off. It's helped so far I dropped 15lbs in 5wks.. not the fastest I've lost but after a complete standstill for months & months it feels good to be headed in the right direction again. Love your channel!!

      I have made this carnivore mashed potatoes twice. I love them. Today I took some of the leftover potatoes roll them in a ball and then rolled in crushed pork rinds and cooked in the air fryer to make a kind of tater tot. They were pretty good. I think I need to play with the recipe a little more.

    Wasn’t a fan of this recipe however, I read some reviewers comments on Chris’ channel who cubed their cold leftovers and pan fried them in some oil. So, in a non-stick pan, I heated about 2 teaspoons of avocado oil and added some cubed leftover carnivore mashed potato’s and pan fried them until most of the exteriors were crispy and golden brown. I drained them on paper towels and served. Crispy on the outside and still creamy on the outside. Now, these pan fried morsels are delicious!!! Sarah and Emily…try it out!

      For what it’s worth, I am so not a gelatin person, and I’m very picky. I am 100% unbothered by the gelatin in this recipe. It’s a really good recipe! I can’t wait to try more of chris’ recipes too, he has some unique recipes. Another one is egg yolk brioche buns!

    I am always amazed by the two of you in many ways. First of all the fact that you were twins is just one of my favorite things in the world I’ve always loved twins and wanted to be a twin but the two of you with this channel has so much integrity. You don’t give out the actual measurements for the recipe because you want people to go to the original post. Giving credit where credit is due is something that comes from your character and I think that it is a wonderful thing.

      You should also try his related potato salad. It’s also involving but is worth it if you refrigerate and then eat it the next day. I didn’t appreciate the texture and taste until the next day.

    I have been following you Ladies (as well as a few other Keto channels). Even though I’m not doing Keto, I’m doing low carb, low sugar, low fat. I enjoy some of your recipes to give myself a variety of options, so I don’t get bored. In fact, I’m enjoying my second batch of 2 ingredient brownies. I am happy to say I made it into the 100 club this morning. It’s been years and I am so excited! Thank you for all you do in your test kitchen and keep it up please. ❤❤

      @@marianne1959 Possible. I'd suggest leaving out the egg white powder and instead mixing in a raw egg yolk as a binder right before before frying. I haven't tried it, but that's my instinct and would be my first method of attempting it. 🙂

    Ive had these at least twice and love it! I also added mashed potato flavor concentrate from One-on-one flavors and my daughter couldn't tell the difference so I know Chris is on to something. 😊 I'm looking forward trying more recipes and watching you do it too!

    So glad you tried this recipe! I am so into these faux-tatoes! I will definitely have them every week. I’ve always paired mashed potatoes with meat dishes, and now I can with this replacement! I wasn’t into other veggie potato replacements I’ve tried.

    Hmmm, ok i just came from watching Chris's keto mashed potatoes, and then found your channel, since I also do deep dives into interesting recipes. I'm no Harold McGee, but I've been doing food experiments for decades. So after watching your video, I feel more compelled to give these a try. My only critique is the cost. But for the sake of science, I'll do it! I have a very good brand of beef collagen, so I won't be buying beef gelatin. Of course, if that becomes a fail, then I'll get the gelatin. Liked and subscribed. Thanks

    I LOVE LOVE LOVE your reactions! You KNOW that it is legit, cuz you won't say something is good tasting if it is not! I have cartons of egg whites and mozzerella just waiting to make this. I just haven't gotten around to it. Indogo made it, and you are the second channel to rate it good so I am convinced it is good. I wonder if I can sneak this into thanks giving dinner?

    I feel like you could microwave the egg whites to reduce the chance of burning and get moisture out easier. I microwave scrambled eggs for these reasons and it works out really well.

      @@lillygordon9121 mine never get rubbery. You just have to microwave for 30 seconds at a time and stir, then microwave another 30 seconds and stir until they are done.

    Mother made Weight Watchers mashed potatoes out of cauliflower back in the 60s. To this day, the mere thought of it makes me gag.

    Wow! I reallly thought one or both of you would say “ughhhh”! and spit the “mash potatoes” out! I’ve mastered cauliflower mash, actually fooling my hubby who hates cauliflower! I’ve got to try this recipe!!! Those are all ingredients I keep on hand…except the white pepper👏🏽Thanks for reviewing this recipe🙌🏽

    Well now that you guys testify that it doesn't taste eggy, I've got to try it! Chris's brioche buns are great as well, although apparently adding salt to the eggs while cooking them is a pretty key moment to be able to even *get* the moisture to evaporate out of them to begin with, which, sadly, I didn't pick up on initially. Next time's the charm, I guess.

    I'd try it if someone made it for me.. but too much work. I really love the cauliflower rice mixtures in the frozen food section, but if someone has a desire or health need then it's great that folks have created options.
