  • Here it is, to answer your question about the difference (and similarities) between instant and active dry yeast. Please follow through the entire video so you will fully understand the difference in the process of using these 2 different yet similar yeasts.

    Thank you so much for posting this! Usually, I use active dry yeast when I bake bread but today I decided to use instant dry yeast. I never used instant dry yeast before. I put the instant dry yeast directly to the dry ingredients and mix and knead the dough. Then I put it in a bowl to make it rise and I set the timer to 40 minutes. After 40 minutes, I checked the dough and it’s still the same size. It didn’t rise. That’s the reason I looked up how to use instant dry yeast and I saw this video. I live in Alaska and the temperature is going down as winter gets closer. Now I know what to do. I need to wait for a little longer because it’s cold inside our house. Thank you again!

      Magandang araw po! It is always difficult to find a warm place even in our kitchen during winter time. I would suggest try putting it inside the oven, maybe this will help. Glad to help and God bless!

    You actually added MORE instant yeast, 1t of instant yeast is 3.15g and active dry yeast is only 2.83g. Active dry yeast has a coating on it that needs to be dissolved first, instant does not, hence you can add without dissolving first. Using Baker's percentages you would want to have 2% of active dry yeast in a recipe and only 1% of instant yeast in a recipe. Hopefully this is helpful :)

      @@carter_1 Did you make your own yeast? I just began using sour dough starter, but only like it for certain recipes because of the sour taste.
      I was hoping to keep a liquid yeast alive by beginning with dry yeast - hoping to avoid the sour taste and thinking I can just feed it every other day like I would with sour dough starter.

    I could never understand why active yeast has to be proofed before hand.This is the first time I have read that active yeast is coated and therefore needs to be dissolved first.I have watched more than 100 bread videos. I believe you .Thanks for new info.

    I still bloom instant dry yeast and get the same result. Natatakot kasi ako ilagay sa flour lalo pag mag lalagay na ng asin and di ko rin sure kung tama ba ang temp ng tubig ko. Natatakot din kasi ako baka di sya mag activate pag diniretso ko sa flour, pero ngayon po gets ko na. Salamat Sir napaka informative po talaga ng mga content nyo. More power & stay safe!

      Maski saang liquid pwedeng gamitin ang active yeast hind lang sa milk, the difference ang active yeast you have to bloom or activate it first for several minutes while ang instant yeast no blooming required. pwede mong ihalo agad-agad.

    Thank u for sharing i have been baking for many years and i prefer instant quick rise yeast its not to yeasty taste on bread, active dry i find it taste bad on bread i dont like the smell.

    Thank you for your work, Ive been using trial and error with making coconut milk bread and ive learned that mishandling your yeast will affect the desired results of the bread. I will confidently go back to the kitchen again lol Thank you

    I used yeast today for the first time when it comes to making dough and I was so nervous because half and hour had passed and my dough didn’t really look different.. but then I placed it in a warmer spot since my home is cool.. and then an hour later it didn’t rise as much I expected. But seeing this video helped me to just trust the process haha

      You can still pre proof instant yeast, it just gives it a bit of a head start.

    Is there any difference in smell of instant dry yeast and the active dry yeast? (before using it.) Or how I would know if my yeast is instant dry yeast or active dry yeast?
    Because I forgot what I'm using now, cause I transfer my yeast in the container. Thank you for sharing.

      I don't think there's a difference in odor between the two. For the process, some pros that I know blooms both the active and dry yeast the same way by adding it to a warm liquid. Still gives the same results.

      The pros said that there might be a little bit of a difference in weight, but for me as a home cook if the recipe calls for 1 tsp of instant yeast, i substitute it with 1 tsp of active dry yeast. So in short, yes, for home bakers.

    I use Allisons active dry yeast and do not dissolve it first in a bread machine I put wet ingredients first with salt and sugar then flour, bread enhancer, milk powder, and finally the active yeast never had a problem with it it comes out really nice I prefer it to the instant dried yeast and get better results

      You're welcome! Baking temp is 320F, baking time would vary, depends from oven to oven. Better to visually monitor the bread. Here's a full video on how I make bread:

      Magandang araw po! ANg gamit ko po lagi sa bahay is active dry yeast, bihira po ako gumamit ng instant dry yeast. To answer your question, kung ano po ang available saakin un po ang the best. On my experience both works the same way naman kaya pareho lang. God bless!

    In short: You have to bloom Active Dry Yeast whereas you can directly incorporate Instant Dry Yeast into the flour.

    What is the best way to store the yeast for long term??

      I do not know the professional answer to this, but for us, we put a clip on the yeast package, and put it inside a zip lock and put it inside the fridge. So far it still works until the yeast expires. God bless!

      On my experience, both of them would yield the same result. As a rule of thumb, the fluffier it is while proofing, the fluffier and softer the bread will be. Hope this helps, God bless!

    Hi po. Thank you po for the video. Now i know what to use and buy para makagawa ng pandesal. Question lang po, if ang gagamitin ko ay almond flour or coconut flour tapos hinaluan ko po ng yeast. Maglalasang parang normal na tinapay na po b sila? Kasi ung ibang nagawa ko gamit low carb flour. Kakaiba lasa nila. Pang pa alsa lang po ba ang yeast?

      Magandang araw po! That is a good one, I have never though of using Almond flour to make pandesal. So meaning to say, hindi ko pa po alam ang sagot dito :) Pasensya na po, baka magkamali pa ako ng sagot sainyo. Pero based sa nabasa ko, kapag inaluan nyo daw ng almond flour ang batter nyo, it will turn out to be softer. I still have to try it, pero as of now yan pa lang ang alam ko about this subject.

    I think I mixed the instant dry yeast and active dry yeast together into the dough and keep it in the fridge overnight found out it didn't rise all that.

      The yeast doesn't work (or takes a long time to work) in colder temperature. Let it rise in room temperature first before placing the dough in the fridge.

    Great video, I am learning to make bread currently and just wondering if you go from this to forming a loaf or does it need to rise anymore after you work with it...using instant yeast?

    Great video and thank you for this demonstration. I made wheat bread today and noticed that the dough did not rise as much as it should have. So now I know that active dry yeast must be mixed with the warm liquid to bloom. I added the yeast to the flour and rest to the ingredients without doing the blooming process. Which yeast do you prefer to use when making wheat bread?

      Good day! Instant yeast is smaller than active dry so it can dissolve easily.

    Thanks! Informative video! We now know you could get the same result regardless what type of yeast you're using. I guess you could interchangeably use them to what's available to you. My question is how do you substitute one to the other? Is it the same measurement? If the recipe calls 2 1/4 tsp of active dry yeast, how much of instant dry yeast would that be? Is it 1:1 ratio just like in this sample video? Thanks in advance! 👍🏼☺️

      Magandang araw po, yes,1:1ang ratio nya. In regards to which should we use, I would use whatever is available on my location, basta i know the process of activating the yeast. Glad to help and God bless!

      I just Google the recipes name... and type for example: Cinnamon Rolls using instant yeast.
      Sometimes Google is faster than vids if you're really wanting to get exact measurements and TRUST ME there's 1,000s of blogs on any topic imaginable!

      Magandang araw po! Glad to help! I really don't see any difference between these 2 yeasts, but ang ibang comments sinasabi nila na ang instant yeasts is better than active dry kasi hindi sya masyadong amoy "yeasty" once baked. I haven't experienced this issue on my baking, more likely personal preference nila un. But performance wise, they both do the same job equally well. About sa softness ng pandesal nyo, I would suggest to proof it longer, kasi the longer you proof it, the more the gas escapes due to the yeast and thus making the bread softer. God bless!

    Thanks for sharing this video. I think I understand now why when I tried making dough for donuts it didn't double in size. I probably used an active dry yeast but didn't allow it to bloom first. Maybe next time

      Thank you very much for your kind words, I really appreciate this. Usually 1 cup yeilds around 7 pcs. For the weight, it is 50 grams each pandesal. Doesn't matter which type of yeast I used. Here's a video of 1 cup of flour for pandesal using a toaster oven:

    Rich C kitchen, pls advise which type of yeast works better for making steam bun or lotus Pau? I'd tried 3 times making Steam buns but failed. The skin is hard when it's cooled. It's not fluffy and looks like it's not rising at all. Usually how long does it takes to rise? I heard from friend saying that over fermented dough can be sour in taste. Is that true? Pls reply.       Magandang araw po! I have never made a steam bun or lotus Pau yet, although I have tried to make siopao before. We used active dry yeast and lard instead of canola oil, and it makes the dough whiter and softer. Other than that, I cannot give you any advice on which yeast is best for steam bun.

      Magandang araw po! Most likely namatay na ang yeast nyo, either expired or sobrang init ng tubig. Kung ilalagay nyo po sa dough yan hindi aalsa ang dough saka magiging matigas. I would suggest try blooming the yeast first para maka sigurado po na aalsa ang dough nyo. God bless!

    Instant dry yeast should be put also in warm water with sugar before it pour in a flour with salt..only an hour it double the size and more....try it..

    Can I add the active yeast in the milk ?? And do I add it directly to the dough or should I let it rest in the milk ?? And can I let the yeast rest in the dough after I let it rest for the 2d time I'm confused 😕

      You only need to add yeast one time. For active dry yeast, you have to add it on the milk. For instant, directly to the flour.
